The circumstances under which I ate roadkill were thus:
My mother and I were driving (well, SHE was driving) on a road in Kansas to visit some relatives. This animal flew in front of the car, and she hit it. She said, “Hey, it looks like a pheasant…let’s take it on to Aunt Helen’s,” and threw it in the back.
If you have guessed that it was not dead but merely stunned, you are correct. The thing woke up a few minutes later and flapped around the car, causing great confusion, during which my mother drove off the road and almost into a ditch. She kept saying to me, “Catch it! Catch it!” a task I wasn’t up to at all.
Once the car came to rest, hanging perilously over the ditch, my mother caught it and snapped its neck with one quick little motion.
She was very happy. A pheasant she didn’t have to pick buckshot out of.
As I recall it tasted pretty good. Kind of, but not really, like chicken.
I’ve had Pheasant with Buckshot…mmm… actually it was always made too dry by the hillbilly side of my family, if I got a hold of it, I might make a coq au vin ala phaisant’. Yea, I might age it too.

Mole poblano is just the sauce; it’s vegetarian unless you use lard (which isn’t a requirement). You can just as well put it over rice and grilled veggies instead of the traditional turkey or chicken.

For those who haven’t had it, raw sea urchin resembles wet, undercooked scrambled eggs with fishy overtones. Lime juice, maybe. Vodka? Shudder
Sweetbreads are not brains. They are pancreas and/or thymus. Brains are completely different and much inferior (pretty much tasteless), at least compared to the pancreas, which is yummy.

Calamaris are great, but frying is just about the worst way of preparing them. Cooked for a few minutes in curry is much better.
Cleaned, sliced, marinated with lemon juice and olive oil & grilled for 3 minutes (stir/turn once) is heaven.
