There are several species of locust discussed in the Bible as being kosher. However, nearly all Jewish communities long ago lost the chain of tradition that identified in a practical way what those species were. The Bible just gives names, and I can’t be certain to what modern species those terms correspond. (There’s a similar issue with birds - no characteristics are given, just a list of 24 non-kosher birds. Since we can’t definitively say what those non-kosher birds are anymore, only birds for which there’s a tradition of their being kosher are officially kosher nowadays.) Although the Yemenite community managed to maintain the kosher locust tradition, most non-Yemenite Orthodox people (including me) don’t eat locusts because it’s long lost from our own tradition.
I’m a little behind because I’ve been vegetarian most my adult life, and my few meat-eating years have been someplace without a great variety of food.

** The only thing standing between me and the three-star Michelin restaurant tasting menu is the fact that Michelin have yet to publish any Canadian guides. Travel is expensive enough without throwing a $500 meal into the equation… so until they deign to acknowledge that fine cuisine exists in the wilds of Toronto, I’m a bit stuck on that one.
