I just finished washing up from making a peach ice cream. I didn’t add any sugar to the fresh peach puree so it may be a bit more tart than one would expect, but I’m hoping the sugar from the base will even it all out.
We’re planning on making ice cream this week, and your two options are our top two contenders as well.

I don’t put green in the mint, I’m about natural coloring, so until folks taste it they might not know it has the mint flavor.

I had Mexican chocolate ice cream for the first time a few weeks ago. Chocolate + hot chiles =¡Ay, caramba, eso es helado sabrosa!
My favorite to make is Turtle.
It sounds like you might be leaning towards choc mint, but I’ll never forget the coffee ice cream I had at a roadside stand over 40 years ago (and I’m 47 now), so although I won’t get to taste your creation I vote for coffee.
Best homemade ice cream we’ve ever made was Pineapple - Basil. I know it sounds crazy, but try it.
Do you already have the ingredients for mint chocolate chip and coffee? Why not make coffee chocolate chip?

I love mint ice cream, but I am often kind of annoyed that I have to have chips if I want mint. But I love coffee ice cream more.
I voted for mint chocolate chip but now that I’ve read the responses I need to change my answer to peach.
I go for mint chocolate chip when I have ice cream (which is less than once a year) and there is no real peanut butter (no chocolate) or bubble gum flavors available.

Banana Pistacio.
Throw one banana and some shelled pistacios in a blender, then throw it in some ice cream base.

Can’t say I’ve ever had or even seen mulberry ice cream. Do you have a mulberry tree? We do, but we don’t make ice cream.
