I was going to mention St. Agatha. She was martyred by having her breasts cut off, and because of this she is often depicted bearing her severed breasts on a plate. But during medieval times the faithful who saw this misinterpreted them as loaves of bread or cakes, leading her to be declared the patron saint of bakers. Today rounded pastries in the form of breasts are sold on her feast day.

Excellent point. I rescind my nomination and am going with St. Bernard! One might note that St. Roch became the patron saint of dogs after becoming devoted to a dog that had saved his life. St. Bernards also became associated with lifesaving missions in the Swiss mountains. St. Gertrude the cat woman, OTOH, was actually more associated with rats and mice, and the association with cats was just an artificial internet meme created for no particular reason, and never recognized by the Catholic church.
I’m sure that if St. Roch and St. Bernard had existed in the same time and place as St. Gertrude, they would have chased her off the premises.
