I’m going to Mom’s and will not be taking anything with me. I have offered to buy her dinner at a nice restaurant, but she won’t have it. She says she prefers to stay in.

Pumpkin pie- storebought
Tres Leches (three milks) cake- homemade
Cheap bottle of Trader Joe’s wine
Buffalo chicken-cream cheese dip- homemade, and corn chips

Caribbean Pumpkin Soup

Makes 4 servings (5 cups)

2/3 cup chopped onion
2/3 cup chopped red bell pepper
2 tsp minced garlic
1 tsp cumin
2-1/2 cups chicken broth
1 15-oz can pumpkin puree
1 15-oz can black beans, rinsed
1 15-oz can diced tomatoes, drained
salt and pepper to taste
(optional: cilantro and/or sour cream for garnish)

Saute onion and bell pepper (either use nonstick spray or a little oil) till tender. Add garlic and cumin and cook another minute. Stir in everything else and bring to a boil. Reduce heat, cover, and simmer five minutes to blend flavors.

Peach pie and dill rolls. Baked by my lovely and talented husband.

In my family, we just ** tell ** the others what to bring.
This will be my first year cooking for only three people(including myself). I don’t know if I can make that little amount of food. I normally cook for 15 or so. I think I still will get the biggest turkey can fit in my oven – just think of how much more I will have for leftovers when cooking a 30lb. bird for three people!

I volunteered to bring “the Pumpkin Cheesecake I made a few years ago.” Unfortunately, I lost the recipe. I found a couple of new recipes, but I want to try them to see which will work out… so I’ll be eating the runners-up for the next few weeks…
