Turkey & Cheddar - what's your best?

Help me make the perfect turkey & cheddar sandwich.
I have the turkey, I have some really good sharp cheddar…

What else do I need?
How do I assemble it?
Heat it up or eat it cold?
What kind of bread?
Mustard/mayo/relish/dressing?
Veggies? Avocado/red onion/lettuce/coleslaw…

Lay it on me dopers!

If it’s real roasted turkey, you’re good. Otherwise, start over.

Sourdough bread-the kind with a good fight-back crust. Sliced or even better is a roll. Roll should be lightly grilled/toasted(butter) on the inside.

Red onions
Lettuce
Salt and pepper
Room temperature.

You may also wish to consider my own piquant concoction, Hot Brownout Mayonnaise.

Bread - get a good, hearty seven grain loaf and slice it fairly thin. Much over a centimeter thick is bad. Spread one side of each slice L-I-G-H-T-L-Y with REAL BUTTER. Place the first slice of bread, butter side down in a cast iron skillet over medium heat. In order, from the bottom up, layer the following:

2 slices, crisply cooked bacon (and the bacon drippings are in the skillet aren’t they?!)
1 good three fingered pinch of your shredded cheese. If it’s got that strong of a flavor then just kiss it with cheddary goodness. Don’t fuck it with it.
Several slices of good smoked turkey
Repeat cheesey pinch
Second slice of bread, butter side up.

Flip sandwich and grill until golden brown and delicious. Cut into triangles and serve with sliced tomatoes, romaine leaves, coarse mustard and a dill pickle spear.

I like alfalfa sprouts on my turkey & cheddar. And dill mustard.

Whatever you choose, toast the bread.

Add a touch of horseradish to a good English mustard.

Turkey, Cheddar, and whole-berry cranberry sauce. I approve of the aforementioned touch of horseradish. Toast bread or not, depending on your personal preference.
