Uh... So now what?

I’ve had a box of Swedish pancake mix in the cupboard for the longest time. I thought I may as well open it for breakfast. “11 Pancakes”. Too many for me, but I can freeze them.

Gee, that’s a lot of mix! Three cups of mix, and 3¾ cups of water. Let me read the box again… “90 thin pancakes”!

I made four 6-inch “crepes” and ate them with jam. Now I have all of this batter left over. What do I do with it? Can I put it in a Zip-Loc bag and freeze it for later?

Oy.

Just like regular pancakes, your best bet is to cook 'em up and freeze the product for later.

Before you freeze them, sprinkle sugar and lemon juice on a few of them. YUM.

Happy cooking!

I can only cook one at a time, and they take a few minutes to cook. Assuming the 90 cakes is correct, that’s about 21½ hours of continuous cooking!

I’ve bagged it and put it in the freezer, and I’ll hope for the best.

I think I speak for everyone when I ask…

how on earth did you manage to misread 90 as 11?

On the front it says:

It’s on the back that it says “(11 thin pancakes or 90 small griddle cakes)”. It takes one spoonful (one of those big plastic cooking spoons) per pancake.
