If I was actually presented this choice, I’d pick green. Just because I like green. Lime, apple, watermelon, or whatever hasn’t entered my brain yet, just “sweet” and “green”.
If I actually thought about the likely flavors I’d get, I’d pick red. Cherry, strawberry, and cinnamon all sound great.
But like I said, flavor doesn’t really become an issue with sweets until it’s already in my mouth. It’s just jewel colored promises of sugar until then. So, gimme a green sucker. Did I mention that I like the color green?
Is the assumption that the flavors will be standard flavors that most of us are familiar with, or can green taste like spinach?
I would go with green, since I like sour apple and lime.
However, where is my blue? I can’t get my blue raspberry flavored slushee without blue! (Or in this case lollipop). I don’t know of any other flavor profile for blue, except maybe peppermint.

On my desk right now is a purple lollipop, made right here in Texas, that is not grape-flavored. It is, instead, Pan-Galactic Gargle Blaster-flavored. (The green one is absinthe-flavored.) So much for your safe choice.
In the absence of other information, I’d pick the red. I’m okay with pretty much all the flavors commonly associated with red candy, and some of them are among my favorites. Just watch out for the sriracha-bacon one–it’s red, too.
Anything but red or purple. Red might be cherry, which is acceptable, but could also be some kind of berry, which is icky. Purple will be grape which is also icky.
So that leaves green, orange or yellow. I would pick any of them, but if I had to pick one and only one, it would be the orange, because it will be orange.
Frankly, I’d love a butterscotch lollipop, and I guess they probably do exist, but I’m not going to count on getting one just by the colour and risk getting a lemon or orange flavored one.
If it’s not six inches in diameter, made of a quarter-inch candy rope spiraled into a disc, multi-colored, and mounted on a ten-inch dowel, then, no; I do not want a lollipop.
I’d have guessed at a purple lollipop being blackcurrant flavoured, but I’m not seeing that floated as a possibility. Is this some cultural difference in colour-signifiers?
