This was one of the items near the top of my list, too. And I went last fall and it was fabulous. Tougher than I expected (we spent 4 days hiking the Inca Trail rather than take the tourist bus up the mountain), but fabulous.

Learn how to scuba dive (I’d rather grow gills, but that might take a while) so I can lie on the sand unencumbered by my need for oxygen as I look up at the sunlight coming down through the water. I’d also like to discover a new fish or some kind of benign marine life and name it something cool.
Own a small cottage in Normandy or a villa in Italy where I can retire or just hang out. It has to be big enough to host intimate gatherings of friends, have a garden where I can grow flowers, fruits, and vegetables, and a fantastic market nearby.
Go see glaciers.
Take a modest culinary class.
Get a dog!

As an aside, I’ve actually done a decent job of scratching some things off my "before I die"list. I married a great guy, I now know how to knit and I’m a yogi. Plus, I can parallel park and drive a cluth. What more does on REALLY need?
Most of my “things I want to do” are “people I want to meet”, and most of those are dopers.
Other than that:
- Get the book I’m (currently not) writing published.
- Explore my theory on grade school education improvements such that it changes the current methods.
- That whole marriage/kids/grow old and senile thing.
- Be happy without the necessity of medication.
- Find some use for the things I can do.
- Learn at least three other languages.
- Be happy.
- Win the lottery.
- Build a solid financial future for my family.
- Unpack my collection of toys from the closet.
- Get my kid potty-trained.
In order of probability:
- Learn to speak a foreign language fluently (I’m working on it!).
- Be one of the few survivors of a global apocalypse and partly responsible for starting the post-apocalyptic society from scratch.
- Gain the powers of telepathy and telekenesis.
- Have Sex.
To know what the hell a CLUTH is. 
I want to spend a month (or more) backpacking around Europe, living off of my savings.
I want to have savings off which I could live, whilst backpacking around Europe. 
I want to eat Fugu. Once.
There’s a certain someone I’d like to kiss.
I want to hangglide.
I’d like to do a two-week-long roadtrip, across the US, with my dog.
Yellowstone would be nice.
Hell, there’s a LOT I want to do.

Live and travel abroad (is coming together; may be leaving this summer).
Talk to my old friends who I wronged and who wronged me.
Fall for someone attainable, and have him fall for me.
Marriage/children.
Keep getting better and better at my job.
Maybe get my PhD at some point.
Watch my brother reach his full potential.
Watch my sister become a fantastic mother.
Get out of debt.
Find a way to live in France for a couple of years.
Buy a house.
Open a restaurant, lunch and breakfast place that did lots of pastry.
Teach pastry somewhere.
Live on a coast.
Write for foodie magazines.
Well…
I want to live outside of the United States for at least a year - maybe more. There, I’d like to attend various concerts of various bands I like, who generally stick to their homelands and never come to my neck of the woods. I’d like also to generally do Europe - visit art galleries, give the Germans a reason to place speed limits on the rest of the Autobahns, get tangled in an international conspiracy, you know, Europey stuff.
Then I’d like to return to America (or stay where I am, if I like it enough, but I’m gonna come back to the States whenever possible) and get married and have one (I’m limiting it to one, but will compromise for two, if necessary) child, whom I will raise to eventually conquer the world and be an example to other children.
In the meantime, I’d like to learn at least three other languages to fluency or at least familiarity - probably more. Plus, I’d like to get at least a familiarity with the more complex bits of history and psychology. I’d also like to learn to paint, play the guitar, sing and run marathons. Oh, and tie my own ties.
On top of that, there’s about a million books I haven’t read. I gotta get those out of my way, too.
Visit outer space.
Learn at least one foreign language to perfection.
Publish a novel.
Produce a film.
Visit a foreign country.
Achieve inner peace.
Play the role of Eliza Doolittle in “My Fair Lady.”
Visit Beethoven’s grave.
Play Tchaikovsky’s Violin Concerto at a level approaching respectibility.
Have a horse.
Have a house with a lot of land.
Have a strawberry patch.
And if I pry my butt away from this message board and computer, I JUST MIGHT ACTUALLY ACCOMPLISH SOMETHING IN THIS LIFETIME!
