I made some Indian food the other day. Chicken Korma, Kashmiri style Lamb, Channa Masala, Spinach Paneer, Naan bread, rice and some chutneys. I had to make my own Garam Masala as one of the guests had a Cinnamon allergy.
I cooked the books! Er, I had better shut up now.
Andalusian Gazpacho, if that counts as cooking. Hours of chopping, mincing, sieving, but no heat.
Yesterday hubby trimmed the very, very overgrown mulberry trees. That means spiced mulberry jam today.
Sounds awesome.
But truthfully, you had me at bacon.

Last night I made homemade red chile chicken enchiladas. The splurge was homemade corn tortillas using our wooden tortilla press.
A can of Hatch brand red enchilada sauce and shredded chicken breast were the other ingredients, plus Monterey jack cheese on top of them as they baked.
Fresh corn off the cob chowder. With bacon crumbles for SO.
We had a free turkey from the grocery store in the freezer since Easter. This week I thawed it out, brined it over Saturday night, and roasted it Sunday. Came out perfect. It was only about 12 pounds so it wasn’t hard to get it all cooked evenly without being dried out. Put some chopped jalapeno peppers along with the apple and onion in the body cavity before cooking it, which added a really nice spicy kick to the flavor.
Baked some chicken thighs coated with a mix of olive oil, lime juice, soy sauce, chopped garlic, and hot sauce. Had a side of zatarains dirty rice mix.
Eggs for breakfast Saturday. Other than that, nothing for weeks, at least.
I made chili and also black beans and rice yesterday. Delicious.
I made my fist attempt at cold sesame noodles with peanut dressing the other day. it was…not good.
Homemade low-carb pizza rolls.
This past weekend, apple smoked chickens.
The weekend before, 8 loaves of fresh bread in an 18th century Quebec style clay oven (at a historical site, the Fort at #4 in Charleston NH). Pizza in the same oven on the Friday night before the event started.
Tonight is country cooking night. Pan grilled pork chops, snap beans with tiny red potatoes and bacon, sliced tomatoes and cottage cheese. There’s some cornbread leftover from the other night that will go quite nicely with it all.
Last night was fried catfish. It was gooo-ooood.
Not sure what’s on the menu for tonight. Will report back if it’s anything semi-impressive.
This past Sunday, I smoked 2 racks of ribs, and a big meatloaf. Served with corn on the cob, and Hassleback potatoes. It was sooooo good!
Yesterday, for breakfast, I cooked up some bacon in the oven, served on lightly toasted onion bagels, smeared with a little mayo, with fresh tomato slices, and fresh baby spinach. Tasty breakfast!
I attempted to make these - kind of. I substituted smoked gouda pie crust for the pop-tart pastry. The crust worked. The homemade bacon jam worked. The cheese worked. The patties, though, were way too thick, so i ended up with something more like a cheeseburger-y-ish meat pie. Not bad, just not quite what I was going for. I’ll try it again someday.
I recently just made spaghetti last night. It was really good.
Made some soup tonight from some leftover ribs and sausage, some redskin potatoes, a big vidalia onion, and a can of crushed tomatoes. Darned good, too. Wish i’d had a better loaf of bread to go with it.
Experimenting tonight. Yesterday The Boy made a soft taco kit and there is left over taco flavored ground beef. In our rice cooker I’ve got rice going flavored with some Old Bay and snips of herbs (two kinds of sage, basil, one rosemary blade and two kinds of oregano) from my garden. Mixing it with some shredded mild cheddar and mozzarella.
That’s going in peppers. Three poblanos and a few multi colored bell peppers. Trying to decide if I’ll top them off with more grated cheese or flavored bread crumbs. NEED OPINIONS ON THIS FAST!
