But the very best steak I’ve ever eaten was a sirloin in Indiana, at the bachelor party of my best friend from college. His best friend from high school’s uncle had won a a ribbon for his steer a year previously. He bought steaks that had been slaughtered that day and put them on a sizzling hot charcoal grill for mere minutes. Absolute bliss.
There are certain meals you just thank Og that you’re alive for.

A well-marbled ribeye, about 1 3/4 inches thick. For the wife it’s a fillet.
Ribeye is by far my favorite, but if a Porterhouse is on sale, I’ll take that too.
What, no oxtail!?
My absolute favorite is a well smoked brisket. For steak I prefer ribeye but I’m not going to turn my nose up at a porterhouse or fillet.
Basically, although I voted, I’d simplify it thus:
Steak cut: Bone-in ribeye
Stewing/Braising cut: Short rib
Smoking cut: Brisket (with a preference to the fattier point/deckle, rather than the leaner flat)

Ribeye or a delmonico if I’m feeling flush and near a butcher.
I thought a delmonico was a ribeye. More or less.
It’s a name that varies by region. Here’s the various cuts that go by that name. More info. It can be:
- Last boneless chuck-eye steak
- Any bone-in rib steak
- Any bone-in rib-eye steak
- First boneless rib-eye steak
- Any boneless rib-eye steak
- First bone-in top loin steak
- Any bone-in top loin steak
- Any boneless top loin steak (New York or Kansas City Strip, for example)
Only one choice for me: Ribeye. Don’t get me wrong, I love a lot of other cuts as well, but I’m a ribeye girl. Medium Rare. Oh man, I want one now.
