I like my carrots raw, I usually eat a handful of baby carrots a day, but I don’t like them caked, juiced, coked, or any other way. Just plain raw. Of course I’m the same with many veggies, so I’m just weird.
Is anyone else getting a huge craving for carrot cake while reading this thread?
I couldn’t eat carrot cake until I was 21. The idea of it just freaked me out. Had some. Better now.

But I have to defend carrot cake: it is a very good conveyance mechanism for the sweet, sweet cream cheese frosting that can usually be scraped right off. With enough care, the foul crumbs of cake that like to stick to the icing can be avoided. Mmm … cream cheese icing …

and while the cream cheese frosting is lovely, I succeeded this last birthday in wheedling a baking friend to make me the best of both worlds, a carrot cake with German-chocolate-cake frosting (the coconutty stuff). . . mmmmm. . .
