And does it vary much from country to country? Also, what is the wake up procedure?

Generally, it’s around eleven pm. Fridays and Saturdays are usually late nights and prisoners can stay up to around two am.
Normal wake-up is around six am. Prisoners have to get up out of bed. On Saturdays and Sundays, prisoners can sleep late until around ten am.
I don’t know first hand but I have had relatives and friends experience prison time. It varies from prison to prison and from state to state. In state prison it’s generally 10 to 11 o’clock and it’s not really lights out but dimmed down and you go to room for lock down. And they like to wake you early, say 5:30 to 6:30 so that you can take your 5 minute shower and get fed.
In county jails its much more diverse as you may not even be required to wake up or go to bed at a specified time. Sleep all day if you want and you will just miss your meals and shower. Lights out is generally just a time when they shut the TV off. Some counties have cells, but others have army barrack style rooms with bunk beds to house large numbers of people. Many have a mixture of both; cells for violent offenders or people needing separated from other and bunks for the masses.
Haven’t known anybody who’s been in a federal facility. At least none that I’ve talked with after they got out. Knowing some of my relatives it’s just a matter of time before I find out.
