What to do with all these Easter eggs?

I usually make egg salad, but it’s so boring. Any suggestions?

Deviled eggs? They never last more than 2 hours at my house.

Or use them as a salad topping…or make a potato salad, use the eggs that got coloring on the whites too for an extra special Martha Stewart-ish festive touch?

Or get some smoked salmon or caviar and serve chopped Easter eggs with em.

I suppose you could get creative and make an Easter egg omelet, if your cholesterol level can take it.

Hmmm, how would fried slices of hard boiled egg taste…

I never get tired of egg salad!

Boy…as much as I like eggs, it’s hard to say what you can do with the hard boiled kind.

Tequila has some good ideas…hmmm. Now I will be contemplating this all day.

Don’t forget, egg salad is good with just tomatoes and lettuce rather than just on bread. Or add your tomatoes and lettuce to the bread.

Dijon mustard is good in egg salad. Aways add in some chopped celery and oh, use real mayo not the reduced fat or fat free, too much sugar.

I’ll second the Deviled Eggs. And Potato salad.

'Course, my Dad’s solution was always peel them, salt to taste and eat. Repeat as needed. :slight_smile:

Chop some up and add 'em to either tuna or crab salad (the imitation stuff works), with plenty of chopped celery and scallions, a little mayo and mustard…

Or spinach casserole; it’s in Zenster’s recipe thread or I can email it to you if you want. It uses 2 sliced eggs but you could up that.

Or chop them up and improvise breakfast burritos: plop 'em in a tortilla, add some crumbled sausage/bacon bits and cheese then nuke 'em until hot; drizzle in salsa.

It’d clog your arteries and your kids would need bypass surgery before the 8th grade but I’ve read recipes for breakfast casseroles using chopped eggs: make a medium white sauce, melt cheddar cheese in it (I’d add Tabasco, of course <g>, then mix in the chopped egg and some cooked sausage; mix with cubed bread top w/ grated cheese and bake.

Sliced into toasted cheese sandwiches w/ a thin slice of ham; crumbled on top of hot toast and topped with fresh tomatoes; or just sliced and served in salads–I’m a salad freak, though.

you betcha. cut the eggs in half, plop out the yolks, mush in a bowl with mayo (helm.'s only), spoon back into the egg, lightly salt. there are those that will add mustard and\or sweet relish to the yolk mush, ignore them they are insane.

from the sweet potato queens:

take your numerous deviled eggs and place them in a casserole dish. cover with tomato soup, cover that with slices of cheese. bake at 300 to 350 until bubbly at the edges.

Well, I don’t have any original ideas, but I’ll second Veb’s for crab salad (my mom makes it quite often, and puts it in Pita Bread; very tasty) and third or fourth Tequila’s for Deviled Eggs (mmm…I wish I had some right now…).

Of course, Rocking Chair is the insane one.

Dump out the yolks, mash with a fork, add mayo, sweet relish and a squirt of mustard. Put back in egg halves and sprinkle with paprika.
