What are you going to do with your Easter eggs?

Easter’s over. You dyed eggs. Now what?

All my Easter eggs are of the chocolate variety, so I’ll just eat them as is.

Aren’t hard-boiled eggs a bit risky after a few hours at room temperature? Or outdoor temperature, unless one lives in Alberta?

Really should have been a multiple choice answer!

We will definitely devil some, and make some egg salad sandwiches, but mainly creamed eggs on toast. Which were known as Eggs a la Goldenrod in my childhood home – anyone else call them that?

Some of all of the above. We boiled 2 dozen for dying this year, of which 22 came out intact and one was squished by an overzealous 6 year old with developing fine motor control, so we’ve got 21 eggs to deal with now.

Some will be egg salad, maybe with some lavender or calendula flowers added for color, flavor and a little spring herbal pick me up.

Some will be deviled, because my daughter wants to learn how to make deviled eggs.

Some will end up in potato salad, because my SO has requested some of my awesome potato salad!

Some, sadly, may be relegated to the great Compost Pile in the Sky, because 21 eggs is a whole lot for 3 people to consume in a timely fashion and maintain their arterial health!

Hey, can you freeze hard boiled eggs?

Ours were all plastic this year. Filled with kitty treats. They went over very well.

I fried up two this morning. They were to dye for.

I had my friend and her kid over to dye eggs, along with my SIL and niece. My friend doesn’t actually like hard boiled eggs and didn’t trust her kid with shells from blown eggs, so she just did all her coloring and then gave me the whole dozen.

I thought I would make deviled eggs but I haven’t had time yet, so I’ve just eaten 4 of them right out 'the shell. I probably will finish that way.

Deviled eggs. Except for the 3 that cracked while boiling, and those were eaten for a late-night snack.

I had planned to use the leftovers for egg salad, but there were no leftovers.
