What to do with one pound of BBQ rib eye steaks?

Got left-over BBQed rib eye steaks. Any ideas for turning them into another meal?

I always do steak salad or “fajitas” with leftover steak. Or you could chop/shred it and use as a baked potato stuffer with sour cream and cheese, like brisket.

Cold steak disappears from the refrigerator here, we just pick away at it till its gone…
. Sliced thin on your favorite kind of roll with mayo or mustard. Sliced thin and added to fried rice, or on top of a salad with vinaigrette. Or chop it up and mix with barbeque sauce on a roll or baked potato.

Barbecue pork steaks get turned into fried rice the next day at my house. Ribeye would work as well.

I’m also partial to Philly-type sandwiches, so I might slice those steaks thin, grill them with onions, and put them on a roll with provelone cheese. Mmm…

Run it through a grinder or food processor and mix it with a little Mayo and horseradish or sharp mustard. You want a spreadable consistency. Don’t overdo the mayo. This is great on triscuits or on rye bread with sliced tomato and onion.

Beef Stroganoff

Slice thin, reheat gently, by sauteeing in butter with onions and mushrooms; use as the filling in an omelet.
