What's for breakfast today?

We had bacon, scrambled eggs with mozzarella, bail, and garlic powder and harvest apple pancakes (cinnamon, nutmeg, cloves, and shredded apples added to my basic pancake recipe). Milk for me, then coffee.

Scrambled eggs w/cream cheese, bacon, toasted slices of Dave’s Insanity Bread, fruit, coffee.

SOS. Only with a biscuit instead of toast, so I guess that made it an SOB.

I tore up the biscuits topped them with fluffy scrambled eggs, and then put the creamed chipped beef on top. Roomie declared it good. :slight_smile:

FWIW:

Creamed chipped beef
1/2 jar Hormel or other dried, sliced beef, cut into quarters
2 tbsp butter
2 tbsp flour
Milk
Dash of cayenne pepper

Make your standard roux with the butter and flour. Toast it so that it’s a bit darker than a manilla folder. Slowly add milk to make a gravy. Add the beef and the cayenne. Heat gently, stirring frequently, until thickened. If it gets too thick, add more milk.


For the eggs, I brought three of them to room temperature. I added 1 tbsp of cold water and beat with a fork. I cook my scrambled eggs over moderately high heat, because I want them done quickly. Let the eggs cook undisturbed for a bit instead of scrambling them immediately. Then fold the cooked bits into the uncooked bits. That (and the little bit of water) makes them fluffy. Don’t overcook.

Today: two chocolate croissants, tea.

Breakfast was an egg, then some Swedish cakes with lingonberries butter from a pancake house, coffee, and strawberries.
