You would ask towards the end of the week, when we’re eating the least popular thing on the menu (Shepherd’s Pie). Of course, I don’t cook as fancy as you guys do on any night!
Tonight was lamb steaks marinaded in garlic, mint, olive oil, lemon zest and juice,then cooked in a very hot grill pan.
Alongside we had couscous/tomato/flat leaf parsly/lemon zest and oven roasted aubergine and maple syrup baby carrots.
A Moroccan rice salad with chickpeas, currants, pistachios and apricots; with lamb and sultana sausages.
Salmon en croute. Mmmmmmmmmmm.
Well since my husband is in the construction industry and the economy has been such as it is, he hasn’t worked regularly for a long time. Our savings are exhausted and we are trying like hell to hang onto the house. That means we will be having beans and weiners (the cheapest turkey weiners you can buy–god knows what is actually in them, macaroni and cheese and applesauce. Last week I cashed in the coin jar (the last of the liquid assets) and bought a 15 lb turkey on sale for 9.00 and the two of us ate for 8 days straight on it. Looking forward to being able to afford a full load of groceries again some day.
Hey, I started the thread and ended up GASP ordering a pizza instead! The SO is in finals (how humanities professors get away with making finals due before the end of classes, I’ll never know) and didn’t feel like waiting for a meal, so we ordered a pizza and walked to pick it up. We did have a nice mixed green salad and sliced strawberries later in the night, so it wasn’t a total loss.
But hey, for dinner tonight is Chickpea Burgers :p. Or, you know, if I get bored, spicy udon noodles, plus diced red bell pepper, snap peas, shredded carrots, and green onions.
I had cereal for dinner last night.
To be honest, cereal is one of my favorite dinners, but I don’t do that every night because I feel like I have to set a better example for my kids.
I made a pot of vegetable beef soup in the crockpot. It will be yummy after an afternoon spent at the bar…
I still have the cast on my arm, so my options are limited.
I made a big pot of tomato vegetable soup, which I’ve been eating with grilled cheese sammiches for days.
Tonight’s dinner is cold pizza. Yum!
Can you come cook for us? That sounds most yummy.
Tonight hubby will grill chicken and I’ll make the steamed green beans and black-eyed peas. Simple, healthy and cheap!
Going to a ballgame. Hot dog and nachos.
Spaghetti and a lecture. Last night it was chicken and stuffing and a lecture. Tomorrow probably tilapia and rice and a lecture…Parenthood is fun!

I decided to go with an old Marmaduke classic:
Open a can of “People Food” and put it in the people dish.
We had polenta with sundried tomatoes, bok choy, sauteed mushrooms and leftover chicken.
We went to our favorite diner. I had a gyro and greek lemon soup, he had a grilled cheese, and we split fries and pierogis. It was delightful, and our one “bad” meal for the week. I had a big salad for lunch to prepare
I’m making EatingWell’s pasta salad later tonight for our lunches tomorrow with whole wheat pasta, skipping out on the olives and mayo, 'cause I don’t like either too much :p.
Low cal fettucine alfredo with chicken and broccoli.
lindsaybluth: I gotta ask, what kinda ranch? I LOVE ranch dressing, but the only place that seems to suit my taste buds (oh so refined they are) are diner or institutional ranch dressing. I haven’t found a good recipe of my own yet, or found a decent store bottle.

The reason you like ranch from a restaurant is because they use the powder and make it fresh with the mayo/sour cream, whatever it calls for instead of the bottled stuff. I used to work at Max & Erma’s and that’s what we made and it’s the only way to eat it! You can buy the packets in the grocery.
