What's for dinner tonight?

Okay I kind of want to know but I also really don’t…you did say “me”, not “us”, so I’m assuming overlyboy and overlygirl don’t have birthdays right about now…

Breaded chicken breast tenders, basmati rice, carrot and raisin salad (with dried cranberries).

The SO had class, and I had grading, so I just made some toast with cream cheese and smoked sockeye salmon. And some whiskey (which is a common element in my dinner on the nights I grade).

3 strips of low-sodium bacon and a Taco Bell soft-shelled taco.

Mmmmm…I want what Kolga’s having.

Baked honey-mustard chicken breasts. Wild rice and green beans on the side.

I realize it sounds like a Lean Cuisine but I’m actually cooking it.

What I hope for:

Steak, mashed potatoes, green beans and Guinness.

But I’ll probably work late and settle for a couple grilled cheeses and baked beans.

It’s vegetarian, but it depends on purchased fresh ravioli (like from Bertolli or whatnot). So you could probably get what you like.

And no idea whether it’s good or not; I haven’t made it yet. I’m thinking it’ll be tomorrow night’s dinner. Last night was indeed mac-n-cheese, tonight is grilled ham.

A huge pot of Pasta Fagioli soup. For dinner tonight, and lunch for many days to come.

Snickers, with panko!? You’re killing me. The SO loves panko breadcrumbs.

Pan-seared salmon and broccoli with hollandaise.

I’ll get around to the macaroni and cheese tonight… it’s Martha Stewart’s fancy one. Half of it is destined for the freezer. I think I’ll roast okra for the vegetable. It’s great with Cajun seasoning.

Here’s the story (my username is particularly applicable right now) -

Overlygirl has a birthday the day after mine, but overlyboy is in May. See, the way my birthday usually works is this: Mom comes to visit, insisting she’s making me my “favorite,” which is usually whatever she feels like and hasn’t had for a while regardless of whether I actually like it. No big deal, though - I don’t usually like birthday cakes anyway, so I make my own, one that actually is my favorite - generally homemade chocolate lava cake, though last year it was brownies (and I went into labor an hour after eating one). If I don’t feel like cooking, my husband knows exactly what my favorite store-bought cake is, so he’ll get that.

Either way, we wind up with a couple of cakes because I’m usually determined to have something I actually want on my birthday. But this year, Mom has decided that my favorite is cherry pie and is bringing that (unfortunately it’s already ordered). My sister is visiting and loves white sheet cake, so of course, her favorite will be there, too. I had planned on making lava cakes when I knew just the pie was coming, but now there will be pie, sheet cake and, because of course the kids can’t have a big piece of sheet cake, mom wants to also get them cup cakes, which I’m going to put the kibosh on - two sweets is more than enough to make us all spin like tops.

Fortunately for me, I do like cherry pie. Were I to have to choose a pie, it’d be cherry. Sheet cake I can take or leave. So, the plan is to let mom and my sister do whatever. Take leftover cake and most of the pie to work (work loves me this time of year). Two weeks or a month after (need sufficient recovery time), make chocolate lava cakes and top with vanilla bean ice cream.

My husband asks me every year why I bother letting my mom push me around on my birthday of all days. Every year I explain that I don’t like my birthday anyway. So far, I’ve had only two good birthdays I can remember - one when I was 30 and my husband threw me a fantastic surprise party and last year’s when I went into labor with my daughter, who was born the next day, on a Friday the 13th. I’m not usually superstitious, but good things seem to happen to me on Friday the 13ths. Last year was no exception. Anyway, even if my mom is a little misguided, eventually I get what I want, and my birthday will probably cease to exist now that my daughter is around, which is probably for the better.

Today is my niece’s 21st birthday, so I told her I would make whatever she wanted for dinner tonight. She requested pork loin and asparagus, so we’re having a grilled pork loin that is right now marinating in lemon juice, olive oil, mint, and oregano; roasted potatoes with rosemary; grilled asparagus with a caper vinaigrette; and mint chocolate chip ice cream. I hope she likes it.

Oh, and we’re also having green beans, because my husband hates asparagus, and I don’t like it much either.

How can she, with a straight face, say the kids need cupcakes on top of all that!? Either way, it all sounds delicious (especially your cake) and the leftovers can always freeze :slight_smile:

Tonight is breaded chicken with raspberry sauce, broccoli, some other vegetable, and Pillsbury biscuits-inna-can.

I’m trying to lose just a pound or two before we go on vacation next week, so I’m grooving on all these food threads lately. It all sounds delicious.

I should first say, I love my mother very much. That said, there are many things she’s certifiable about. Food is one of them. With her, the more and the fattier, the better. I purge my fridge thoroughly every time she visits. I wish I could use all the food she buys, but she gets so much, and so much of it unhealthy, that I couldn’t possibly eat it all. And my kids aren’t used to eating so much cream and butter, so they don’t generally want it. I give away what I can.

We’re having rama chicken (i.e. chicken and spinach in peanut sauce) tonight, but I have a vague feeling that I’ve posted that one before in one of these threads. So I will share what we had last night, which is crockpot pulled pork. It was awesome.
