I hear ya. My mom eats like an NFL linebacker and is only 15 pounds overweight while my poor father watches everything. My mom keeps telling me that to lose weight I should should eat less. Which is true, but it doesn’t help that she says it while shoving another piece of tiramisu in her mouth :smack:.
Fried rice with brown shrimps, mushrooms, kale, and herb butter. Simple but so delicious we accidentally ate the extra I’d made to take for my lunch tomorrow!
Vegetable stew (red onions, white onions, garlic, haricot beans, tomatoes, potatoes, carrots and peas. With stock, Worcestershire sauce, paprika, black pepper, parsley and so on), with dumplings. Served with some crusty sesame seed bread.

Chilled pasta salad with good olive oil, freshly chopped spinach, grilled red peppers and feta. Yum.
Tonight is too boring, but tomorrow is the mister’s birthday. So we’re having… Chicken Pot Pie! (Cooks Illustrated recipe) Haven’t had it since we started low-carbing, but it’s what he wants. Plus, pumpkin pie for dessert. Fortunately I made all the doughs on Sunday, but I’m still leaving work early to put everything together. Mmmm, chicken pot pie.

Tonight’s performance is a bit better, since I’m still grading but SO is home. Roasted root vegetables (parsnips, onions, purple potatoes) with olive oil and herbs, along with grilled bratwurst (meat for me, veggie for him).
And wine. LOTS of wine. Damn, when will these students learn to write in English?

The root vegetables sound so-cool-seasonal, and the brats – never out of season.
Tonight was vaguely Persian Gulf-ish lamb and eggplant stew with baharat, over basmati. Judging by the shop where we bought it, the baharat is of the more or less Iraqi variety, though I couldn’t tell you for sure exactly what spices are in it.
I love that the pressure cooker makes this a feasible weeknight dinner!
As usual rice…<sigh> I can hardly wait to get a full time job so I NEVER have to eat rice again.
Macaroni and cheese, part deux. Yay. Will have salad with it.
This week has turned out a little strange actually. Last night instead of Calzones we did leftovers, since we both weren’t hungry. Tonight a friend invited us to dinner, so hopefully tomorrow will be calzones.
A tooth and a tonsil hurt so dinner was Ramen. I might have some peppermint ice cream later.
I roasted up yellow onion and red pepper and then mixed in scrambled egg and cheddar cheese. Then I plopped it on toasted bulky roll with butter.
It was filling, but not so good otherwise.
I heated up some TJ’s “Quinoa Duo With Vegetable Melange”, tossed in some broccoli florets, and topped it all off with tuna in green curry sauce.
French Onion Soup (cheater style) - saute some sliced onions in red wine and olive oil, pour in Pacific brand organic French Onion soup (from a carton), simmer, pour over a piece of french bread toast, top with gruyere, drink the rest of the wine with it
Oven roasted chicken breasts with stuffing and some veg I haven’t come up with yet.

Spaghetti made with some venison sausages that I made earlier in the year. They were close to getting freezer-burnt, so had to be cooked. It was good.
