Mmmmm, quinoa. I haven’t had quinoa in awhile. I think I’ll make a batch of it.
Okay I FINALLY got around to making the Broccoli & Corn Calzones. They were awesome! I used a refrigerated ball of whole wheat pizza dough from Trader Joe’s (16 instead of 20 oz, so I made 4 not 6). I also used 2% Mozzarella. Next time I’d use more mozarella and less ricotta; the SO was not the biggest ricotta fan. And use WAY more salt if you don’t have hypertension. Bake little longer than 15 minutes too if you like them pretty crispy (but not overdone). I have an oven thermometer so I know I was right on 475 the whole time.
List of ingredients doesn’t say it, but don’t forget a can or jar of tomato sauce. Nuke it in a ramekin and stir in some red pepper flakes for a little oomph
Next time I’ll saute garlic and onions and stuff 'em in there as well for a more traditional flavor.
