Well, inspired by the Build your perfect burger thread, we had burgers tonight! Nice, lean 1/3lb patties, seasoned with Chicago Steak seasoning, pan fried. I fried the bacon in the pan first, then drained off as much of the bacon fat as I could, and just fried the burgers in that. Mine got shredded cheddar (melted on while still in pan), then two strips of center-cut bacon, dill pickle chips and A-1 sauce. Meanwhile, mudgirl’s got a slice of American (melted on, like mine), and ketchup.
We both had fries and some spiced applesauce. My fries had gravy on them!
I found a really nice polenta dish in a Rachel Ray book. I usually use corn meal in place of polenta (I think that’s what polenta is, right?). Anyway, I believe it was two cups of chicken broth, one can of pumpkin, one cup of polenta (I used cornmeal), a tablespoon or two of butter, a teaspoon or two of fresh thyme and salt and pepper to taste. Melt the butter in the chicken broth, mix in the can of pumpkin, stir until smooth and boiling, dump in the corn meal, turn down the heat and stir constantly until it thickens to desired consistency, then toss in the herbs and salt and pepper.
If you use less water or cook for longer, you can probably come up with something that can be sliced and grilled, though I like my polenta mushy. On top I served black beans, though I think the recipe called for black beans and sausage. It was fantastic.
It ended up my hunger couldn’t wait until morning. So, I dumped my remaining yellow rice in a pot and added about 2/3 cup of water and set the stove to 3.
I took my chicken breast and coated it in Mrs. Dash, black pepper and a few sprinkles of garlic salt. Then I plopped it on my GF grill. I cooked it about 9 minutes.
When done, I chopped it up and added the pieces to the rice and increased the temp to 5 for a minute or so, then emptied it onto a plate.
It’s strange that such an easy dish can be so good.
I’ve a cold that’s knocking me on my ass; I don’t get sick often, but when I do, I feel like I need to sleep for weeks.
So…tonight’s dinner was 5 or 6 extra-dark Lindt balls.
Mmmm.
I had plans to make some zuppa toscana but I can’t stop sneezing long enough to wield a knife.
Tonight is beef-barley-mushroom soup with crusty bread and butter.
Tomorrow will be spaghetti pie - a dish I shamelessly ripped off a local restaurant.
