Had the beef satay/peanut sauce from last night as a wrap with greens. Delish!
I made a sort of chicken cacciatore with pesto angel hair pasta and salad.
Chunks of chicken breast, bell peppers, onions, and mushrooms in a wine sauce with a bit of marinara, flavored with garlic, oregano, basil, fresh thyme and chopped parsley.
It was yum!
Leftover pot roast and gravy on a hamburger bun, nuked for two minutes.
Lazy, lazy, lazy! Frozen mini corn dogs, nuked; canned fruit; yogurt.
I’ll do better tonight, though! I’m going to put some boneless skinless chicken thighs in the slow cooker with some Teriyaki sauce, and serve it up with some stir-fry veggies and brown rice.
Lemon risotto, catfish broiled with chili, and roasted asparagus. I don’t care if summer doesn’t feel like coming, I’m in complete and utter denial.
Tonight is pork chops, cubed and browned, in a “velvety curry sauce” with peas and udon. Well, actually soba noodles as I couldn’t find udon.
Later this week is lots of choices - stuffed chicken breasts, oven baked crusted pork chops, pork tenderloin with peppers, stuffed peppers, with accompaniments like “heavenly” baked mashed potatoes, scalloped corn, and such like. I’m in a “try new recipes” mood and went through my cookbooks and assorted cooking magazines for new choices while making up the shopping list Sunday afternoon.
Snickers, are you me?
I go through “try new recipes” mode in much the same way, and make up my list to go shopping on Sunday.
But tonight we’re having a tried and true downhome Texas favorite. Chicken Fried Steak, mashed potatoes, cream gravy, and peas.
It’s Shrove Tuesday in the UK, so I’m making pancakes. Pancakes here are more like Frnch crepes than US-style panckes, and I’ve never made either, so I’m a bit nervous. I’m told they’re easy, but you never know.
We will have them with maple syrup, lemon and cream. I can hardly wait!
The trick to getting your crepes to come out right is to let the batter rest for half an hour before you start frying them. If you do that, you should be in the clear.
And if, hypothetically speaking of course, I’m not saying have, but if I’ve cheated and bought ready-made batter from Marks & Spencers…?
Then, if your crepes don’t come out, you’ll be contacted about the class-action lawsuit
Pancakes! Thin whole wheat pancakes, homemade strawberry jam, maple syrup, eggs, applewood smoked ham, and grilled mushrooms and onions, in whatever combination the people eating like best.
I love Shrove Tuesday.

Tonight is stuffed red bell peppers. New recipe, we’ll see how it goes. I don’t have a side dish, but I think I need one. Any ideas? There will be garlic bread, but I’m thinking I’ll need something else too.
The local grocery had red bell peppers on sale, 10 for $10. And I already had recipes planned involving 8 bell peppers anyway, so I jumped on it. Besides, green bell peppers are icky. **Snickers **no like.
Veggie curry night… chickpea and cauliflower curry, carrot cumin raita, rice.
Does your filling have rice? If not, try dirty rice on the side. I make a version of stuffed peppers where I take large slices of peppers, and stuff them with meatloaf mix with Cajun flavors. Pan fry on both sides, then add some jarred marinara (with some Cajun seasoning added) and place in the oven for 1/2 hour or so. Dirty rice goes great with it.
I’ll give you a recipe if you need one.
Yep - the peppers are stuffed with a mixture of ground beef, breadcrumbs, an egg, and some uncooked rice, covered with marinara and baked for a while. I’d thought maybe of doing a polenta, but I’ve never made polenta. Could this work?

I’ve never made polenta either. I was looking for it in the store the other day, and this Spanish lady pointed me at the cereal aisle and the grits! I know it’s the same, but I was looking for it in the Ethnic aisle. I did find a box, but it was very expensive.
I already had grits at home. One of these days I’m going to make grilled polenta cakes. It’s all the gourmet rage!
