What's for dinner tonight?

We had one last night to eat junk food before my husband got back from his trip, so we ate seven-layer dip (refried beans, guacamole, sour cream, etc.) on tortilla chips.

Ugh, I’m glad he’s home!

Porcupine meatballs. Comfort food from my childhood.

Make meatballs from one pound of ground beef, an egg, and the rice/vermicelli from a box of Beef Ric-A-Roni. Brown them. Add 2-1/2 cups water and simmer 20 minutes. Make gravy from the Rice-A-Roni flavouring packet.

The meatballs are browning now.

You put the packet contents in with the water. Thicken the gravy at the end.

I made baked tilapia with a bread crumb/parsley/garlic/parmesan/fdrizzle of olive oil topping. So easy and fast.

Chicken vindaloo from scratch (no pastes, no prepared powders) . I was going to do pork, but decided I wanted something leaner, so ended up with chicken. It’s funny how much reading Cafe Society affects my dinners.

Mac & crab bake with 5 bean salad, Wanted something simple, just 2 boxes of mac & cheese put in 2 small cans of crab meat added some English Cheddar put some Italian bread crumbs on the top bake & serve.

Tonight: Delivery!

Chana Masala, Dal Saag, and South Indian spicy shrimp soup (tomato, pepper and coconut base). I wanted spicy tonight to help clear my stuffed-up nose. I’ve had a cold since Saturday. It did the trick, was delicious, and plenty left over for tomorrow.

Chicken thighs, chopped and sauteed with this miso dressing I found at Costco. Quite yummy!

I was out shopping. I stopped and had some Chinese buffet.

We did this with elk tonight and it was tasty! We’ve got some notes for next time (less sugar in the sauce, smaller dice on the meat) but there will be a next time. Thanks for the recipe link, silenus!

Hmmm, I think tonight it’ll be Muir Glen’s 3 bean chili served over quinoa. I halve the recipe so we’re not eating it for a week. I add lots of tabasco too.

pulykamell, I feel the exactly same way. It’s as if someone is watching me, which makes us all sit up straighter.

Chicken and shrimp gumbo.

The Fella will be driving up tonight and with the chilly weather we just got hit with, gumbo sounded good. I’m fixing a salad and cornbread to go with it.

I made a recipe called Happy Shrimp. Sauteed shrimp in butter and garlic, with chopped green onions and diced tomatoes in a white wine and cream sauce. Served with angel hair pasta with a bit of pesto, and steamed asparagus on the side.

We’re kind of light on supplies. (Actually, I have lots of sausages. Cajun Andouille, merguez, boudin, Swedish potato sausage, soy chorizo, two kinds of vegetarian Italian sausages, and a little bit of Jimmy Dean’s.) But I think roomie might be getting tired of sausages, and she says the Cajun is too hot for her. I suspect the merguez would be too hot as well.

So I got out the bag-o-chicken tenders. Garlic salt, pepper, and I sneaked in a little cayenne. I baked them in the convection toaster oven, covered them with honey BBQ sauce, and cooked them a little longer. And I mashed a potato. (It was huge.)

So baked BBQ chicken and mashed potato for dinner tonight.

It was either that, or cook some rice and put the chicken on top and douse it with cream of mushroom soup and fried onions.

Braised beef back ribs (not short ribs) with assorted veggies. They were on sale for $1.99/lb, looked pretty beefy, so I went for it. Made some vinegary coleslaw to go along with it.

Also, got jerk chicken wings and regular hot wings marinating for the grill at tomorrow’s opening day fiesta. The jerk is knock-your-socks-off hot, but tasty. As long as you can handle all the habanero (there’s 12 of 'em in about 3 cups of paste), it’s got a nice balance of allspice, thyme, brown sugar, garlic/onion, and some citrus notes. This is my signature opening day dish, and the guys request it every year.

Also got bored and made some homemade sriracha (red jalapenos were on sale), and had some quality cream that was about to go bad, so was inspired by the butter thread to, well, make some butter out of it.

Well, my middle daughter (almost 20) got fired from her job yesterday, so she was depressed and wanting her mother, so we have an unexpected visitor for the weekend.

Since she was a fairly young child, her favorite dinner has been turkey roast, mashed potatoes and steamed corn. So I’m making that for her tonight.

She’ll be fine, I’m sure. Tomorrow, the hubby and I are going to look at a house for sale, about 40 minutes east of here. She’ll go with us. If we buy it, chances are good that she’ll move back home and go back to school. We’ve always made it crystal clear to all of our kids that we have no problem supporting them past age of ‘adulthood’ if they are going to school full time. Of course, she’s going to have to scale back on buying ‘cool stuff’, since she had plenty of disposable income as a working girl without a lot of bills to pay. But she’ll have a roof over her head, plenty to eat (including turkey roast at least once a month!), and she’ll be improving her shot at a brighter future.

Bacon cheddar burgers, no bun. Sauteed green beans with garlic chips, kosher salt and a little lemon juice. The bacon is cooking now and I’m salivating.

This is going to be much more hearty than last night’s whirlypopped popcorn and celery with pb.

Oh, and I agree with nonacetone. norinew, you’re awesome!
