What's for dinner tonight?

i have been inspired to make gumbo tonight, with chicken, andouille sausage and shrimp. It’s about time to go start the roux. Mmm.

And cheater key lime pie for dessert. (Key lime flavor lite yogurt, fat-free cool whip, and sugar-free green jello all whipped up together.) I’ve never made it before, but the picture looks good!

Pork green chili, a standby. We make a huge vat and freeze most of it.

Fittingly for a stew-cooking day, it has been snowing since this morning. Doh! Spring in the Rockies. It was 50 degrees and sunny on Friday.

Grilled ham and cheese sandwiches on Dave’s Killer Bread, and a side salad.

THe jambalaya was even better the second day.

Once again, because I was reading about it on the Dope, I got the hankering for jambalaya. It was basically just “raid the freezer” jambalaya, as the grocery store was closed at 10:00 p.m. and I didn’t feel like running out to a 24 hour place. I found some smoked sausages I made a few months ago, some frozen chicken breasts, and a bit of frozen pulled pork, which I put together with an onion, a frozen bag of mixed peppers (but no celery around, unfortunately), garlic, stock, a couple tomatoes that were just about to go bad, and spices. Worked out well. Jamabalya is great for clearing out the fridge and freezer.

Here at the new household, it’s mudgirl’s turn to cook! She will present us with perfectly al dente angel hair pasta, beautifully dressed in a complex marinara sauce, accompanied by toasty slices of thick Italian bread covered in butter, garlic, herbs, and an authentic Italian cheese blend. Mmmmmm. OK, it’s spaghetti out of a box, slightly doctored sauce out of a jar, and frozen cheesy garlic toast, you got a problem with that? :stuck_out_tongue:
It makes her feel really good to cook one night a week, and she likes even better that I let her ‘play’ with the spice rack to doctor up the sauce!

norinew, did you decide to buy the house?

Well, we’re going to make an offer on it in the next week or two. If she accepts the offer, yes, we’ll buy it. But we won’t move in until school is out. That will give us time to do most of the cosmetic work it needs (doesn’t need anything structural), and I won’t have to pull mudgirl out of school this close to the end of the school year. The payments on it will be quite low enough for us to just carry it for a while.

Tonight’s a pizza twist recipe from Pampered Chef, I think. Except it won’t be twisted: since there’s only 2 of us (and the full recipe is rather a party dish), I’m halving it. What can I say? I didn’t get any meat out of the freezer, so it’s either the pizza twist or quiche. I’ll leave out the olives as Mr. Snicks doesn’t like them (but I love them).

Yesterday was home-made chicken pot pie (so good), then we ordered pizza for dinner. And I made chocolate cake for dessert!

We are also having pizza tonight. I like to just buy the dough, cheese, and sauce fixin’s and leave the topping to chance, so I suspect tonight’s pizza surprise will feature interesting ingredients such as kielbasa, carrots and celery.

We obtained a clay cooker unexpectedly, so if I can scrape together the minimal amount of energy required after work, we’re gonna have Honey-Lemon Chicken.

If I can keep my eyes open long enough to soak the thing*** and get the food started, I’ll report back with results. Otherwise: drive-thru, or something out of the freezer, in which case, nobody here needs to know! :slight_smile:

All we seem to do around here lately is graze. A yogurt and banana here, a sandwich there, some form of burger and frozen fries, a pizza, or whatever I can unearth from the freezer, with a salad. It was so dark and cold the other night, I needed something more than a Lean Cuisine or soup, so I cooked State Fair corn dogs and macaroni and cheese (from a box, but cheezed up) and it really hit the spot. Much better than the failed pasta/shrimp/asparagus dish I tried out.

Amen on the celery + butter combo. 24, but I’ve been making up for lost time like crazy! Certainly there have been missteps, like sauteeing pickled jalapenos and which caused my nose and eyes to burn for a whole day while the apartment aired out :smack:.

Wow. And to think you ever called yourself a “stay at home mom”. You’re part superhero!

I think we’re going our traditional pasta tonight. Trader Joe’s plain tomato sauce, basil from a tube (pretty close to fresh tasting), red pepper flakes, black pepper, lots of fresh parmesan and a half packet of Splenda to balance out the acidity. Whole wheat penne and a batard from the bakery. Romaine salad on the side.

Pasta tonight for us, too. Probably stuffed shells, but maybe sausage and rigatoni. With a side salad and a glass of wine, of course.

I made an enchilada casserole, with half ground beef and half ground turkey. I should have put more tortillas in it, but it was pretty good for a thrown together meal. I made some guac on the side.
