Last night was crockpot Chili Verde. Yummy!
You were spot on. I put the cheese on at the end and left the pan in there a wee bit too long. Toasty and tasty but the 2nd batch was better with just a minute in the oven. Boy were they excellent, really almost as good as a restaurant’s. They just showed up at my local Trader Joe’s so I encourage anyone to try them, sprayed with canola oil and seasoned with salt/pepper and baked at 425 for 18-20 minutes.
I made mac 'n cheese with the cheese from an Annie’s box and Whole Foods whole wheat shells. Man was it good, drizzled with some Sriracha. I also added some shredded parm to it as well.
Tonight is breakfast for dinner! Blueberry buckwheat pancakes with scrambled eggs and toast (for him).
I got work tonight, so I’m not making dinner, but my late lunch is going to be some bon-bon/bang bang chicken, once again, inspired by another thread. (I’ve never had this dish before.)
norinew’s not kidding about that meal being cheaper than Mcdonald’s. The last time I was at Mcdonalds (and the last time ever due to horrid food poisoning) I was stunned at the price of the value meals. You can’t get one for under 6 anymore, though you can put together a "meal" for 3-4 from the $1 menu.
Kahiki Eggrolls (if you haven’t tried these, do yourself a favor!) and a green bean stir fry.
Lean burger patty topped with fresh pico de gallo, roasted potatoes with rosemary, grilled onions.
As I posted in the recent salad bar thread, I love Wegman’s salad bar. I stopped there this evening and made myself a meal.
Homemade gluten-free pizza. With a sea-salt, dark chocolate-covered caramel for dessert.
After wolfing down 3.5 crabs on Saturday, followed by a ton of pork posole on Monday, followed by lots of carne asada Monday night, my gall bladder seems to be hell-bent on making sure I never eat again.
So tonight is what it has been for the last 3 days, which is yogurt, bananas and rye bread. 
We had grilled hot dogs with grilled buns, Wolf Brand chili and Kraft macaroni and cheese.
It was heaven! I’m soooo fuuuullllll…
There were a lot of errands to run tonight, so a quick stop at a local Greek place put a souvlaki plate with a Greek side salad. Yum!
Tonight might just be leftovers since I made a double batch of the mac 'n cheese.
Tomorrow, though, I’m going to grill for the first time this season (!!!). Ground sirloin burgers on bakery fresh buns. Baked beans and possibly potato salad on the side. I might even try whipping up fresh mayo for the burgers.
A pot of pinto beans is simmering on the stove, with a big ol’ hambone in it. Later I shall make cornbread!
A typically lazy Friday night dinner: Stir-fry.
Oh good god does that sound delicious. I’m starving. But that’s what I get when I don’t have enough protein at lunch.
Friday is usually pizza, but SWMBO is jonesing for Chinese, so that is what we are doing. I could do with a plate of Garlic Shrimp myself.
Simple fare. Pan sauteed halibut, dusted with flour and cayenne pepper. Broiled asparagus with lemon. That was a seriously nice filet, and there’s more for fish tacos tomorrow night. (The original menu was more complicated, but our friends had to bail on coming over for dinner.)
Cheese enchiladas with homemade pico and sour cream.
Pork shoulder steaks - these are really cheap, but dust them with some BBQ rub and cook them on the grill, and you got some serious good eats.
I’ve microwaved some potatos and carrots, and poured a tin of hot chicken curry over them.
I know, its a gift,I think cookings in my blood.
Please don’t embarrass me by asking for recipes.
You’ll just have to wait until the book comes out.
