Oh my god, these roasted brussel sprouts are so good. I’m pissed at myself that I just discovered them and could have been making them low these 30 years that I have been cooking. Dammit!! They are wonderful.
SIL’s turn for family dinner: bratwurst cooked in a pan and wrapped in filo with a smear of mustard, then baked, scalloped potatoes, and a salad, with home-made lime/coconut cookies for dessert.
Since mudgirl is off school on spring break this week, she’s been pestering me to take her to the park. So today looks like our best shot at decent weather for doing that. Therefore, so dinner won’t be rushed, I’ll put some chicken legs, heavily seasoned, in the slow cooker with some Cream of Chicken soup to cook all day. When we get home, I’m going to make Crash Potatoes (recipe courtesy of Pioneer Woman) which I’ve never made before but look delicious. I’ll steam some veggies to go with.
I was out shopping today and bought some sushi as I left to go home. Unfortunately it was the first time I’d been to the place and it will be the last. Pretty ordinary and there is a good place only minutes in the other direction from home.

Throw 'em on a cookie sheet, drizzle with olive oil, sprinkle kosher salt (or any other kind of salt), pepper, even garlic powder, and cook at 400 for 20 or 30 minutes, shaking the pan every 5 to 7 minutes to ensure even browning.

Pork carnitas tacos with rice. Tomorrow night is wings, Lots and lots of wings. (Staters had a BOGO special of them last week.)

Greek Salad.
Simple and healthy.
SALAD
1 small Romaine lettuce
4 Tomatoes; cut up
1 Red Onion; thinly sliced
1 Green pepper
1 Cucumber; peeled & sliced
1 cup Black olives, Greek or kalamata
200g Feta cheese
DRESSING
1/4 cup virgin olive oil
2 tb red wine vinegar
1 pinch Oregan
Toss everything together but the cheese, which goes on top.
Serves two.
Last night was Chicken with Creamy Braised Leeks, from EatingWell (again - it seems I’m a shill for them lately. And I don’t even have a subscription!). I served it with whole wheat rotini, mainly because that’s what I had on hand. It’s a winner, and pretty simple too. The whole meal takes about an hour to prepare, but most of that is baking in the oven, so there’s not much hands-on time. The Mister really liked it.
Tonight is a big mystery. I have a happy hour with some friends, but it’ll probably end early-ish. We’ll probably end up going out.
Chicken drumsticks that have been marinating in hot sauce over night. Should be delicious! Wil be served with a green salad and some yoghurt.
I’ve been trying to use up what I’ve got in my freezer, and one of the things I have in there is a batch of meatballs that mudgirl and I made about a month ago. So tonight is going to be spaghetti and meatballs with cheesy garlic toast.
Leftover ham on a ciabatta roll, and some Terra vegetable chips. Yesterday was mustard-glazed salmon and spinach, though; that turned out well.
I’ve got rice and lots of odd veggie bits to use up. Therefore, it is fried rice night.
