We had leftover Swiss Steak (home made) over some noodles.
We had a (small) ham, mashed potatoes, steamed carrots and squash.
I’m having baked potatoes with green onions, fried garlic, sour cream, several kinds of cheese and a little bit of butter… Mmmm… taters! I could fry bacon but it’s overkill…
Leftover corn spoon bread. I’m about to have a string cheese as my bedtime snack.
Lamb and rosemary sausages on bread with mustard, rocket, mushrooms, onions and tomatoes.
I had a microwave ‘Lean Gourmet’ 5 Cheese Lasagna that ends up looking like a skin graft after it’s been micro-blasted. sigh
The wife and smallest had ravioli’s with spaghetti sauce out of a jar (added meat and a few spices). I’ll have that tomorrow for lunch.
Well, I found some monster ‘country style’ ribs in the knock-down bin so I bought a bottle of BBQ sauce and threw it all in the crock pot.
To paraphrase Joan Crawford in ‘The Women’, “Ribs and BBQ sauce in the crock pot? What’s to keep it from getting delicious?”
I made meatloaf, buttered parsley potatoes and green beans.
Spiral-sliced ham. It was on sale at Sam’s Club, and I’m giving half of it to my daughter and her fiance. It’ll take care of my sandwich needs for the week, and the hambone is in the freezer, awaiting its transformation into ham and bean soup next month.
Barbecued beef ribs, with a couple of my sister’s contest-winning sweet potato cakes for dessert.
Homemade chicken cacciatore over pasta, sweet tea and garlic bread. My new Le Creuset is awesome and has been getting good use since the holidays.
I ate a mesquite turkey with provolone on toasted wheat bread sandwich after work. And had a beer. Yay for not knowing how to cook. Might have some pretzels here and another beer; I’m off tomorrow.
Bruschetta (with waaay too much garlic and I was too lazy to toast the bread crostini-esquely), baked couscous with spinach and pine nuts, and a too-heavy (but still good) cabernet sauvignon. I like it when I cook but I don’t do it nearly enough.
Cornflake crumb chicken (thighs and a few breasts), broccoli, baked potatoes, cheese sauce, and some frozen corn and beans. The chicken was a recipe from my mother - slightly different from what’s on the box.
1/4 of a Costco pizza with hot sauce and pickled peppers on top, and a can of cheap (but good-tasting) beer. Due to forgetfulness regarding the refrigerated status of a litre of half-and-half when I left the house this morning (should have been 1, turns out to have been 0), it looks like I’ll be baking a cake or something for dessert shortly.

Leftover vegetable curry from the huge pot I made on Sunday. Yum!
Last night we had homemade spaghetti bolognese (Hubby makes the BEST sauce ever) and tonight we’ll be having pork goulash with vegetable rice and a tiny bit of sour cream. For lunch, it’ll be left over lasange with some coleslaw. So looking forward to lunch already and it’s only 9.30 am!!!
Hubby works out of town during the week, so on weeknights, it’s only me, EtherealFreakOfPinkness, (15), and mudgirl, 7. Therefore, weenight dinners are usually quick n easy kid pleasers. Tonight will be pigs in a blanket (hot dogs wrapped in those refrigerator dough crescent rolls, and baked), baked beans, and fruit.
Tonight will be flank steak marinated in french dressing (don’t knock it till you’ve tried it!) and au gratin potatoes. I can’t WAIT to get home!
