Marks & Spencers (well-known supermarket chain in the UK) were doing a “two eat for ten pounds” deal this weekend, in which you got one main course dish, a side dish, a dessert and a bottle of wine for a tenner. I bought two, one of which included a large chicken, and have already got half a dozen meals out of them.
Tonight’s dinner will be risotto made with the leftover chicken and gravy, and the stock I’m making from the chicken carcass will help make a delicious soup or similar at a later date.
I brought in a dinner-like lunch (chicken loaf, green beans, and a potato casserole which is vaguely sludgy) so I will probably go easy at dinnertime. Maybe egg salad on English muffin or a bowl of cereal. Oh, and FatFreeSugarFree Fudge Chocolate Pudding and Cool Whip Free for a dessert later.
(I’ve been trying to eat more healthfully but never thought I’d buy Puffed Millet cereal. It’s a lot like Puffed Rice only in a tiny round form.)
Put into a big bowl some of your favorite bottled teriyaki sauce and squirt in some Sriracha sauce - the amount is decided by your personal heat tolerance. Add a few drops of sesame oil. Slice up the chicken breasts into strips. Stir-fry them with a bit of garlic until barely done, then scrape them into the bowl of sauce and toss them until coated. This is my modified “Asian buffalo wings” recipe, using chicken breast rather than wings. It’s extremely good - we had it a few nights ago, with an Asian coleslaw.
I put a pork loin to marinade yesterday to make a Cuban style roast tonight - Olive oil, lime juice, orange juice, black pepper, kosher salt, oregano, and lots and lots of garlic.
I’ll cook it tonight along with black beans and rice, a cucumber, heirloom tomato and basil salad, and maduros (fried sweet plantains.)
I haven’t been cooking much lately, but we’re hosting a harvest intern again this year (he’s from Mendoza, Argentina) and it’s been fun so far cooking for and with him. We’re even eating at the table again like civilized folk!
Going for a pub meal tonight, at a place recently taken over by a local guy with Malaysian parents - there’s a fantastic pork belly dish which I might have to have again, with a soy-based sauce and chorizo mash. And ridiculously crispy crackling. Mmmmmmmmmmmmmmmm.
Chicken soup. I found some chicken thighs and turkey broth at the bottom of my freezer, so maybe it is really poultry soup, but I want to use up the carrots and celery and the last onion from the previous bag. Maybe cheese biscuits if I feel ambitious.
But now I have to open another bottle of white wine for the soup. I wonder what to do with the rest of it…
Bell peppers stuffed with a ground beef, rice and garlic mixture, then topped with tomato sauce and parmesan. Yum. Served with pasta salad and mixed fruit.
I have an idea for two pounds of boneless skinless, the aforementioned chicken loaf. Blend/process chicken till mushy. One cup chopped onions. One cup chopped watercress. Two cups fresh breadcrumbs (but I use panko). Two egg yolks. Salt and pepper, 1/4 teaspoon nutmeg.
Combine like you would a meatloaf. Smush into loaf pan. Cover in wax paper and then an airtight lid (or aluminum foil). Place in larger pan with boiling water in it. Cook on 400 for an hour and a half. Good hot, really good cold.
YES! This is what I am going to have for dinner tonight! I knew a doper would be able to put their finger on what it was I needed to cook. Mmmmm, tacos.

Huh…if I recall correctly, the last time we did one of these threads, my answer was Nachos Supreme, same as it is this time. Funny, since my wife only makes this two-three times a year (and to head off the whining from last time, yes, it is too dinner ).
ETA: Hmmm…makes sense that I’d have the same answer, since I was the one who started the thread last time (and it wasn’t really the same as this one).
