What's for dinner?

Last night was a brick of chilli (from the bucket o’ chilli I made and froze), thawed, dolloped onto a pile of tortilla chips and nachoed up with storebought salsa, guac, pickled jalapeños and melted cheese. It was about quarter to eleven by the time we finally ate…but our daughter’s birthday cake was hollowed out, filled with M&Ms and finally decorated to look like a climbing wall and we were quite sozzled, so we needed something entirely uncomplicated but very rewarding!

Tonight, when we return from the actual climbing wall, I shall drink martinis, uncork a Barbera, make a couple of pizzas - one pepperoni and black olive, and one anchovy, caper and green olive (I imagine, anyway)…and said daughter will choose a movie.

Racetrack casserole (scroll past all the words - the recipe’s about 1/3 of the way down the page). I halve this recipe since I’m only feeding 2 people and use leftover rotisserie chicken to make it.

Pan fried walleye, parsnip purée, salad and baguette .

I’m not sure, but I’m thinking about falafel pitas.

I’m making the case for mushroom risotto.

No tzatziki at the store. I bought Greek yoghurt, a lemon, a head of garlic, and an English cucumber. Also, pocket pitas and some extra feta.

Taiwanese food.

I wish I had known how easy it was.

And the store-bought tzatziki I’ve always gotten here has always had a bit of an odd taste to it. I don’t remember what brand I’ve used, but I’ve been so put off by it that I’ve always just made it since, as you note, it’s easy.

I bought a pound of ground beef/pork/veal mix today and made Far Too Many Meatballs.

The dogs got two meatballs each, along with their regular dinner.

Went to the restaurant and ate next to the crew that was set up in the parking lot to film an episode of “American Vandal”. I’m always stunned by the huge amount of equipment required to shoot a scene or two.

Maple mustard chicken cordon bleu and au gratin potatoes. Perhaps a salad.

No way, that sounds like a lot of work! :slight_smile:

The crepes turned out pretty decent, except of course for the first one. I used it as the bottom layer on the mushroom torte I was building. The torte was pretty tasty too, which made sense as I figure it was about 50% butter!

Now sometime this week I’m going to make chicken cordon bleu, inspired by the other thread.

Yeah, I made the cordon bleu last night … but no idea what “we” want for tonight.

He, of course, wants me to make MOAR cordon bleu!

Falafel sandwiches again last night. I reheated the leftover falafel in the toaster oven. We only had two pocket pita halves left, so we each had a sandwich and some falafel on the plate.

I’d bought a red papaya at Trader Joe’s last week, intending to have half of it for breakfast this morning. Mrs. L.A. wanted to try it last night. She didn’t really know how to eat it, so I showed her the way I do. I cut it in half and scrape out the seeds with a spoon. Then I squeeze some fresh lemon juice on it and eat it with a spoon. She liked it.

That’s the first time I’d bought a red papaya. Normally I get the yellow ones. The red one was about twice as big as the yellow ones I’m used to. It also tasted better. (Sometimes the yellow ones can taste a little ‘musky’.) Anyway, for breakfast I’ll have an English muffin with Vegemite and no half of a papaya.

Last night was sauteed shrimp on top of leftover wild rice with mushrooms and toasted almonds.

Tonight we’re going to Apizza Scholls which is supposed to be the best pizza in Portland and has gotten national attention as well. East coast type quality. At $26 for an 18" pie, it had better be good.
