What's for dinner?

We had Marie Callender’s Chocolate [del]Satan[/del] Satin Pie for dessert.

Who was it who said, ‘Eternity is a ham and two people’? We’re having leftover ham tonight.

The bacon wrapped nameless meat pie was quite the hit!
Crazy easy with store bought pie crust.
I will add that to my list of go to-s.

Grits and eggs.

That’s what they’d call it in the South, and it would be breakfast. Here in Hipster Brooklyn, it was “polenta with olive oil-fried eggs,” and the inspiration came from the NY Times cooking app instead of Bubba’s Diner, and it was dinner. With braised mustard greens and chard on the side.

Absolutely delicious, with the crispy egg-white edges, and the yolks melting into the cornmeal mush, and plenty of Parmesan grated over the top. And oddly soul-satisfying for a no-meat meal.

Recipe?

Another new recipe this evening. Pasta with shrimp, goat cheese, basil, crushed red peppers, garlic, seeded and chopped tomatoes, and olive oil. Very good.

Well, shrove Tuesday, so shrimp etouffee for us! Got Professor Longhair playing on the Echo, so laissez les bon temps rouller!

Jesus Christ, I never even noticed! And I had fucking FRIED EGGS for dinner, and am listening to Lee Wiley!

STUPID STUPID STUPID

We had cheeseburger grilled up on the gas grill. A bit chilly out to be cooking out but so worth it!

I brought home a couple of muffalettas, but Mrs. L.A. brought home sushi and made a pot of cheese-and-broccoli soup.

We are lazy cooks. I just hit on a new, easy, healthy combo.

Quick cook quinoa. Then boil up whatever green veggie we have. 2 nights ago green beans, yesterday brussel sprouts. Nuke some frozen mixed veggies for color and variety. Dice a tomato. And add some jarred sauce - most recently Maggiano’s tomato/vodka - seems pretty free of chemicals.

Really easy to prepare, and pretty healthy to boot. (Not sure why people say cooking for 2 is difficult.) As I’ve observed before, I would eat people kibble every day if it were sufficiently tasty.

Quesadillas last night, good ole spaghetti and meatballs tonight.

We tried the smoked pork belly and Thai peanut sauce recipe, plus some roasted cauliflowers and sweet potatoes. It was really good, but now we still have like a quart of peanut sauce left over! I bought some apples so I can eat it as a fruit dip.

Carne Adovada tonight with some friends. I used this recipe, which is by the same guy who has the best beef stew recipe ever. The only change I made was to add a teaspoon of ground coriander and a couple packets of plain gelatin. It had to braise significantly longer for the pork to finally give it up. An initial taste reveals a deep, smokey taste of peppers and spice. Looking forward to it.

silenus mentioned Chinese food in another thread.

I’m going to suggest that.

We just finished some tacos. Tomorrow night pot roast with mashed potatoes, gravy and vegetables.

The Ukulele Lady left for Chicago last night, along with the alpha dog. I made myself some chicken schnitzel and turned my failed experiment of Hungarian potatoes in sour cream and dill into a potato salad by adding chopped gherkins, paprika, and a chopped hard-boiled egg. I cooked up the leftover egg wash and bread crumbs for the beta dog’s dinner.

Tonight I’m gonna get me some Brooklyn pizza…I’m thinking either sausage/onion, or pepperoni. From the awesome pizza place a block and a half away, where Little Pianola wants to get food every day when she visits, even though she lives in Chicago now, where they know about good pizza. (“But it’s not BROOKLYN pizza!”)

Beta dog will have the usual dog food, a rice gruel with chicken, chicken giblets, and sliced carrots.

My kid’s school has bought into the “food storing”/relief for Africa thing, and she came home with the recipe they used. Rice, lentils, chicken powder, and hot pepper flakes in individual containers, stored at their school for one year “in case they get stuck there” (like, wut?) then shipped off for famine relief.

She wouldn’t eat any herself, but had been begging to be allowed to “cook” it–meaning scoop out the measurements and have me cook it. So we did. Tasty enough, with a lot of Cholulua.

We are at Bonanza tonight.

Cooking something yummy tomorrow. Probably going to be some combo of chicken, beans, cheese, and hot sauce.

I honestly believe that children being taught to cook, in school, would not only improve their meals immensely, but also teach them about waste, want and usage of fresh ingredients. “You want lunch? MAKE IT!”

And… It was surprisingly good. I ordered take-out from a local place. I never remember it’s there, because it’s not on the main road. From the direction I approach, the road it’s on meets the main road at an angle that means I’d have to look slightly backward to see it as I pass. And it’s next to a motel, ‘behind’ it, as seen from the main road. So I seldom eat there.

We had Sichuan Crispy Beef, Broccoli Chicken, Kung Pao Chicken, soup, fried dumplings, fried wontons, fried rice, BBQ pork, and fortune cookies. They forgot the Spring rolls. (I didn’t call them because I didn’t feel like driving back, and there was plenty of food anyway.) Everything was delicious. As usual, I picked out a kung pao chile and ate it by itself. It had zero heat. The KPC was pretty mild. But! It was very tasty. The chicken was moist and tender and flavourful, not dried up like I’m used to getting. The broccoli chicken was also good, with the same perfectly-cooked chicken. But I really wanted the broccoli. The beef was a new thing for me. Also very good. And the fried dumpling was better than any I can remember having.

Me made a dent in it, but not a huge dent. Lots of leftovers.

Yeah, that’s what we did last night here (kind of), as well. I made some kind of Chinese-American beef with peppers, mushrooms, celery, carrots, onion – basically whatever veggies I had lying around. A sort of “cleaning the crisper” meal. Oyster sauce, soy sauce, MSG (for that authentic experience!), garlic, ginger, and a little bit of chicken stock and corn starch. Turned out quite nice.

Just another example of the Dope influencing my cooking. I swear at least once a week something I read about here gets me making it for dinner.
