Skirt steak
Any good cut of meat (filet mignon, NY strip, sirloin, ribeye), medium or medium-rare.
We recently had a company dinner at George’s Place (86th and Keystone). MMMMM - fancy dinner on company bill!! They have this cart that they wheel into the dining room with large hunks of raw beef on it. You choose your cut and how many ounces, and they slice it off right in front of you!! I got 16 oz of NY strip ($40) so I would have leftovers.
BEST STEAK EVER!!! (In my limited steak-eating experience, that is.)

I think thats what we (Aussies) call a Scotch fillet, which is a cut from a rib-eye roast.
My favorite, is a fillet steak, which is cut from the tenderloin.

That is not aged at all! It is best to age steak for a month in the cool room.
