What's your lunch tomorrow (or other days)?

I’ve been buying these lately. They’re the Green Giant ‘Health Blend’ frozen vegetables. I’ve been buying them because the vegetable pairings are pretty good and the sauce isn’t overwhelming. I just cooked up some chicken breast that I’ll heat at work and mix in with one of the vegetable boxes.

I forget what the sodium level is, but it’s probably somewhat high. The beauty is it tastes really good, is super easy and only costs me ~ $3.50 for the meal ($1.59 for the vegetables, $2 for the chicken).

I might take a salami sandwhich on Wednesday: sourdough bread, salami, thick slices of sharp cheddar cheese, plain yellow mustard and banana pepper rings served with (maybe) potato salad.

Grilled and cooked yesterday, so my lunches (and dinners) this week will be a combination of:

grilled pork chops with mojito lime sauce
grilled steak with mesquite sauce
grilled chicken with teriyaki glaze
grilled foiled wrapped talapia with salt, pepper, diced onion, celery, and red, yellow and green pepper

kale
potato salad (the full monty)
heirloom tomato salad in italian dressing with the same dices above
grilled squash
fried green tomatoes

yellow rice
couscous

Maybe a fried egg sandwich with ketchup, or a bacon, onion, and cheese omelette. Will probably have the omelette on Thursday. Grilled cheese on Wed.

I usually make a sandwich, on a whole wheat bun, consisting of butter, meat, cheese, mustard/mayo and sometimes lettuce.

I buy a soup in the cafeteria and bring a bottle of water.

Once in a while I get crazy and buy lunch in the cafeteria: primarily on paydays.

Left over dinner from last night- Whatever I Need To Use Up In My Kitchen Pasta. Fresh tomatoes that were about to go bad, some olive oil, asiago, tons of onion, garlic, fresh basil and parsley, whole wheat fettuccine.

Tomorrow I think I’m coming home for a cheap meal.

I occasionally buy the 8 packs of El Monterey Beef & Bean Burritos. They’re around $4.39 at the regular grocery store, but Walmart usually has them at $2.98. Except for yesterday, when they had them for $2.03.

By themselves, they’re not much. But with taco sauce, shredded cheese and sour cream, they’re not half bad.
