Xan can cook!

Recently I’ve started cooking. I started with fried rice and have now branced out into omletes and bacon!

For lunch I made a mozzarella cheese omlete with bacon. mmmmm

Omelette, please. It’s French.

Unless you wanna put jalapeños and chorizo and stuff in it (mmm), then you could get cute and call it an om-LAY-tay.

I loves me some spanish omelette.

1/4 green and 1/4 red pepper, diced. Sautee in (light) butter or margarine until soft.
4 eggs, beaten with 1/4 to 1/2 cup skim milk. Mix in sauteed peppers.
Pour on pan and cover for 2-3 minutes.
Uncover and spoon salsa down the center. Optionally, add diced jalapeño peppers.
Sprinkle with cheddar cheese.
Cover for an additional 1-2 minutes.
Fold into omelette, place on plate, baste with a dab of butter and serve.

Damn you. Now I’m getting hungry.

One of our favorite easy fixn’s meal is scrambled eggs with canned salmon over steamed rice. Add plenny shoyu, but.

Another good and pretty simple dish is Lily’s Chicken Adobo:

3-4 pounds chicken thighs (with or without skin, but with is tastier)
2-3 cups of vinegar
1 cup soy sauce (shoyu)
2-3 bay leaves

Put all the chicken in a pot. Add the liquid. There should be enough liquid to cover the chicken just barely. If you need more, do equal parts shoyu and vinegar. Add the bay leaves (tear them in half first to get the flavor out). Bring to a boil with the lid off, then put the lid on askew and simmer for about half a hour. Serve over steamed rice.

Seriously, though, congrats on learning how to cook! That’s one of the things I want to experiment with when I move out.
