your very own fast food

This would be my idea as well. I realized after my most recent trip that the foods I’ve liked best in my travels have all been the cheap, easy appetizer type foods, not the fancy, Culturally Important Foods.

If I win the lottery, I’ll spend a year doing an around-the-world pub crawl, then bring back all the best tasty little appetizers to sell.

Maybe set it up like those sushi-go-round restaurants, where you grab a plate off a conveyor belt, and then get charged based on the number of dishes in front of you at the end of the night. Not quite a “revolving menu”, but yes, it does actually revolve

I remember when people were lining up on the street to get in back in the '80s. What set it apart was that Chef Paul would buy whatever fresh ingredients were available in the morning, and that would be the menu of the day. I’d take a similar approach and make everything to go.

I think I’d open a place that specialized in potato products (both “regular” and sweet potatoes). Every kind of french fry, tater tots, mashed potatoes, hash browns, potato knishes, potato soup, etc.

I love potatoes. sigh

I would go there.

It WAS done forever ago… chili parlors used to be pretty common in the first half of the twentieth century.
