Yeah, that seemed suspicious to me, as well. She never did answer the question of what the relevant state was, nor did she confirm that it was Texas; she just kind of went along with it once other people were assuming Texas to be correct (since that state also fit some of her earlier comments).

I am not WASP - i think lots of people know that - I am adopted, illigitimate, and extend my hand first to shake regularly. I also shake with a medium-firm, confident grip, although I am very careful to adjust my grip to the person (I shake old people’s hands very gently, for example).

In this day and age, in the U.S., you can’t tell. The U.S. is too ethnically diverse and too multiracial now. The only way in the U.S. you are likely to know someone is Roma is if they still live in the community (and you’ve identified that) and/or tell you. Sort of like knowing if someone is Jewish - if they dress Orthodox and/or live in the community, you can tell - but a big nose is insufficient evidence.
(My grandmother was Roma).
