Mac-n-cheese-n-peas were quick, easy, and not awful for supper. I just didn’t feel like cooking and my sweetie didn’t want to go out. So here we are.
It’s still raining a bit, and the temp is down to 59° - weirdly cool for this time of year. I’m freezing even tho it’s 71° in the house. Hope I’m not getting sick…
Time to turn off this machine and assume the position on my recliner.
So, since I’m sharing it, here’s my meatball recipe:
The meatball recipe:
1.25 lbs ground turkey
1.25 lbs ground beef
1 cup-ish whole wheat bread crumbs (I did two pieces of bread in the food processor. Pretty sure it was more than a cup)
1 egg (anybody know why these recipes always call for an egg?)
1/2 onion, diced (threw it in the food processor too. Onions kill me)
3 or so cloves of garlic, minced
1/2 cup-ish shredded carrot (I did a double handful of baby carrots, in the food processor)
1/2 cup parmesan cheese
1 tsp salt
1/2 tsp black pepper
2 tsp basil
2 tsp parsley
1/2 tsp red pepper flakes
about 1/2 tsp Angostura bitters (I can’t tell if that made a difference or not, so optional)
Mix, form into 2 inch balls, cook at 400 degrees for 20 minutes. I put mine on wire racks on foil lined cookie sheets, but they didn’t make as much of a mess as I expected.
I think next time I’ll try putting some pureed zucchini and/or spinach in there, because I don’t eat enough produce. Oh, and I think cook the onions first so they’re a little caramelized, because ah, yeah. They taste good cold too, which was the plan because I’m taking them in my lunch.

Dindin is et and OYKW has left to go visit family over to the wilds of West Alabammy bein’ as this is Mother’s Day weekend in the USofA. Actually, he’s goin’ to MonkeyTown to night and spendin’ the night and part of the day tomorrow with a cousin he’s close to but does not get to see often. Thus I am without adult supervision until he returns on Monday. Well, that’s not exactly true because Sattidy mornin’ I will head up to Ye Olde Hometowne to visit my own mom and family, so I’ll have adult supervision that afternoon and on Sunday until I head back to da cave. Also, no Evening Prayer over to the church house tonight because our Bishop will be in Albeeeeeeny tomorrow for Albeeeeny Convocation Confirmations where a bunch of us Whiskypalians get together for such things as Confirmations. It shall be downtown at St. Paul’s aka “The Mother Church,” so called because St. Paul’s was the first Episcopal church in the area and the church from whence all the other Episcopal churches in the area began as missions before growin’ up to be Parishes.

She also made chocolate chip pancakes, matzoh brei(urk!) and boiled chicken carcases until you could pave a road with them.
Actually, it isn’t bad with fresh peas.
The reef tank light was delivered this evening. 48", blue and bright white tubes with LED “moon glow”.
I have it on the Tanganyika tank as we speak.
We were going to set a reef tank up in the 100, then the 50, perhaps the 20 long.
I want to have a lot of water so that we have room to screw up, Mrs. Plant (v.3.0) wants it small to begin so that we can afford enough coral and rock to make it will look good.

In other news, this afternoon at three p.m. I get to meet an insurance adjuster and the roof guy at da cave. I am sure I have wind/hail damage and shall find out for sure then. Like I need the expense of a new roof right now but if’n it is damaged insurance should take care of most of it. Roof guy is the only one I trust to replace the roof if it needs it. He’s just the best in town.
Now I need more caffiene and should find sustenance for rumbly tummy. Then, alas, irk purtification must commence.

Based on our and our daughter’s experience, larger is better. Getting the chemistry right in a reef tank is the trick, and the smaller the tank, the more concentrated your potential errors, if that makes sense. Between our tank and the sump, we’ve probably got 150 gallons, so it’s easy to make tweaks when salinity or pH or trace elements are off. If you’ve got a smaller volume, you have to be careful to make teensy-tiny tweaks.
I can also tell you from experience that once you get the chemistry right, the corals will go wild! I swear, you can almost see them grow as you watch! So if you’re serious about a reef tank, you need to go as big as you can manage, or you risk the frustration and expense of the teensy-tiny tweaks gone wrong.
And good morning, all! I thought I was going to get to sleep in. When **FCD **left, all was quiet… for about 5 minutes. Then Higgs started whining and pawing at her door. Stoopit dog. So we’re up, fed, and semi-functional. She’s chewing on something noisy next to my desk and I’m caffeinating in an effort to counteract the remaining effects of melatonin. I should have taken it earlier last night. Oh well.
There’s some chance of rain today, but I might try to futz in the yard anyway - we shall see. I do plan to strip the sheets, and I should start doing something about the guest room since my in-laws will be here in 2 weeks. I’ve got ground beef out thawing - can’t decide between meatloaf and pseudo-shepherd’s pie or another alternative for supper. We shall see.
But first, I need to read the comics and Dear Abby and Cheezburger - thus beginneth my day!
