Another dinner thread!

I made kefta and warm tomato salad, from scratch. Adding this to store-bought hummus, flatbread, and sliced cucumbers to make a very respectable dinner.

I made Chinese stir-fry last night. Velvet chicken, the way my mother taught me. I think I have fulfilled my cooking requirements for the week; I will do something lazy tomorrow.

Last night was a fabulous (if I say so myself) black bean chili - no comments, please. I like beans in the chili, and they’re a good way to stretch the protein for 9 people. Today, I’m cooking for a teacher appreciation meal at my kid’s school, so I baked some potatoes and served chili taters, made extra bread while I was baking for the teachers, and added a salad.

Now, I need to come up with a dessert to send tomorrow. I’m thinking something with apples - maybe an apple pie bar cookie? I dunno…

Double post to brag: My semi-invented, kludged-together apple caramel cheesecake bars are fabulous. Seriously. If my husband finds them before 10:30 am, when I need to take them to the school, I will be forced to buy cookies from the deli, because he will eat the rest of the pan instead of the crumbs we feasted on.

I need suggestions!

I have bone in chicken breast in my slow cooker, along with a can of diced tomatoes (with chilies), chopped leeks and chopped carrots.

What dish to serve it with? I’m not really in the mood for rice. Not really in the mood for pasta, either.

Any suggestions?

Ok…

When the chicken is done, shred it with a fork. Mix the veg into the shredded chicken. Warm some enchilada sauce in a frying pan. Dip corn tortillas into the warm sauce, and roll the chicken mixture in them. Arrange in a baking dish, top with shredded cheese and olives, and bake until the cheese is browned. Or just make chicken tacos. Might be a little weird with leeks and carrots, but why not give it a try?

Or throw in some dumplings.

Or slice some onions, green and red bell peppers, and some squash (zucchini, plus another non-sweet kind), and roast for a side dish.

Tonight…

Running out of leftovers. So I thawed a pound of ground bison and cooked it up with chopped onions, minced garlic, salt, pepper, cumin, chili powder, paprika, onion powder, garlic powder, Tapatio, and some water. I cut up some corn tortillas and made chips; and steamed some corn tortillas, put the meat in, and fried up some tacos dorados in the cast iron frying pan. We also had refried beans.
