A friend is interested in duplicating Entenmann’s Metropolitan cake, which they no longer make. Does anyone remember what it was - something with raspberries and coconut, he thinks - in order to try to make something similar?
The metropolitan cake was a vanilla cake with white frosting and straight lines of rasberry soft jelly like stuff drizzled on the top and then dusted with coconut flakes. t was my favorite cake in the world and I was very sorry to see it disappear. I have never found it anywhere, but it should be easy to make, a single layer pan vanilla cake with white frosting, maybe soft rasberry jelly drawl lines on top and sprinkle with coconut.
I find that I am able to get my coconut cake habit through Pepperidge’ Farms Frozen Cocoanut 3 layer cake. Very excellent and you could drizzle raspberry sauce or jelly on top if you like. I like it frozen.
