Basically foreshadowed Oberyn’s fight exactly.

Littlefinger (referring to the Iron Throne): It’s an ugly old thing, yet it has a certain … appeal.
Varys: The Lyssa Arryn of chairs.
I do not remember this beach umbrella sized bit of shade but I can see Varys with his Buddha almost smile saying it like he’s dropping ancient wisdom in my mind’s eye.
It’s one of my favorite scenes from the show, primarily because of exactly what you’re referencing. It’s a quiet little scene between Littlefinger and Varys in the throne room at King’s Landing (first or second season, I think), and it’s very understated … but the scathing, incisive, world-weary wit of Varys was on full display there.
I prefer this one.
*The Hound: “You want to suck my dick, is that it?”
