I do agree however, that Canadian Bacon is more akin to ham than bacon.
Oooh, you haven’t had my husband’s super-delicious scrambled eggs with chorizo. I’ll bet you’d change your mind. We live a half a block from a Hispanic supermercado and they have the best fresh chorizo I’ve ever tasted. There’s packaged chorizo but it doesn’t taste anywhere near as good. I wonder if that’s what you had.
If nothing else, Patty O’Furniture, I do believe you have nailed the lid closed on the sub-categories! Beautiful.

My favorite breakfast is dinner left-overs. I rarely cook “breakfast”. If I cook anything for first meal, it’s usually ramen noodles with a lot of veg and stuff added. When I have bacon I like crisp american bacon, when I have sausage I like it browned, both patty and link - and preferably Bob Evans.
