My “other” choices were a nice salt cured, bone-in, slice of Smithfield/Virginia ham fried crispy with Red Eye Gravy and a local fried liver sausage known as Ring Liver Sausage, generically. I like the looks of all that are listed however, and wouldn’t kick any of them out from under my pancakes or eggs. A few, I have never eaten… One of my other favorites is corned beef hash.

Nürnberg sausages are supposed to be eaten before 11 am “When they are still fresh”. Still, not necessarily a breakfast item, more like a mid-morning snack. And great with a beer. Also good, as Zeldar’s link mentions, on sauerkraut. We got some once in the wine country along the Rhine with the best sauerkraut I’ve ever had - it was not at all sour, with a nice flavor of cloves and allspice. Went well with a few glasses of wine.
