Oh, nonono… that’s not a Gateau St. Honore (although you’re in the right direction), that’s what’s known as a croquembouche. The Gateau St. Honore has a puff pastry base in which the cream puffs are attached around the outside with caramel, and the center is filled with pastry cream. It’s finished with whipped cream and drizzled chocolate on the cream puffs. I think this year, I’d like a dark chocolate cake soaked with Chambord, filled with raspberry mousse, and frosted with ganache.

Indeed, I do agree with the handsome & talented Max Carnage - Red Velvet Cake is the food of the Gods. And yes, it has to be cream cheese icing, accept no substitutes.
I agree wholeheartedly (and with bristlesage and susan_foster as well). Except that it needs to be a four layer cake, and the frosting is made with cocoa, butter, powdered sugar and milk–not too stiff, not to hard, and almost bitter to offset the sweetness of the cake.
My birthday isn’t for months and months, and now I want yellow cake. And I want my Mom to make it for me. And she’s 400 miles away. Waaaa.

White boiled frosting (the kind that harden juust a bit when it cools.) Mom’s the only one I know who makes it right, I can’t get the knack (mine always seems too thin, so I wind up turning it into a buttercream)

Black forest cake. Chocolate cake brushed with kirsch, REAL whipped cream, fresh sour cherries (not canned). A few bittersweet chocolate curls sprinkled on top would be a nice touch.
Once when I was visiting the South, I had a piece of cake that someone’s grandmother made. It was a moist yellow layer cake with a very creamy, fluffy frosting that had pineapple bits in it. Doesn’t sound like much, but it was outstanding. If anyone has the recipe to this and would like to post it, I would consider myself eternally in your debt.
A nice, dense, chewy carrot cake with walnuts and ridiculous amounts of cream cheese frosting will work, too.

I’d rather have cheesecake, but my Aunt’s almond cake is nummy. Almond flavored cake, fluffy custardy filling, and this incredible frosting that reminds one of candy truffles but tastes like almonds, and then toffee bits sprinkled over it all. Someday I hope to be found worthy of a copy of her recipe.
