Good Mornin’ Y’all! Up and caffienatin’ here. Purtification for work to commence soon. Woo and Hoo. On the agenda today is trying to get tye yard mowed when I get home from work so I don’t have to do it on the weekend. Yeah, it’s that excitatin’ around here.

Here’s three more recipes for ya MCUNE the first two are sure fire hits at any brunch but also make a good supper dish on a cold night. Then again I like breakfasty foods on cold nights. Go figure. The last one is sump’n BBBobbio would enjoy doin’ to his nuts. 
Sausage-Cornbread Casserole Bake
A good brunch dish
1 pound mild or medium sausage
Three-fourths cup of milk
1 large onion, finely chopped
One-half cup of vegetable oil
2 eggs, lightly beaten
2 cups of sharp grated cheddar cheese
1 and one-half cups of self-rising cornmeal
1 large can of cream style corn
Preheat oven to 425 degrees. Grease a large iron skillet or a two quart casserole dish and set aside. Brown the sausage and onion and drain well. Combine eggs, cornmeal, corn, milk and oil. Pour half of the cornbread mixture into the prepared skillet or dish, sprinkle with the sausage and onions and cheese, then pour the remaining cornbread mixture on top. Bake 40 to 45 minutes. Let cool ten minutes before serving.
Sausage and Egg Bake
Another good brunch dish
1 pound of mild or medium sausage, cooked, crumbled and drained
8 eggs slightly beaten
2 and one-half cups of milk
1 can of cream of mushroom soup
1 cup of sharp grated cheddar cheese
6 to 8 slices of white bread, trimmed
1 teaspoon salt
1 teaspoon of black pepper
1 teaspoon of dried mustard
Place bread slices on the bottom of a 9x13 casserole dish. Mix together the eggs, milk, cheese, soup and spices. Add the sausage. Pour over the bread. Cover and refrigerate overnight. Bake at 350 degrees for 45 minutes or until brown on top.
Spiced Pecans
1 cup of sugar
1 teaspoon of vanilla
One-half teaspoon of cinnamon
2 cups of pecan halves
One-half cup of evaporated milk
Cook first three ingredients to the soft, ball stage. Add vanilla and pecans. Mix. Place on wax paper and separate.
Good stuff!

Back when the dinosaurs roamed the earth, and I was still in Indianapolis, I managed to get in line at the local McDonald’s about 3 cars ahead of my back-fence neighbor. She went at the same time each night to buy cheeseburgers for her 2 Huskies. The booger that I was, I paid for her order and drove off. It took her a week to figure out I did it, and the entertainment value was priceless.

Have a nice sore throat this morning thanks to Complicated Roommate and his smoking. Speaking of, last night’s bad movie was Dolemite. The final fight scene was so laughably bad I borrowed the DVD to show it to Complicated Roommate (a black belt in kung fu–it’s fun watching bad martial arts movies with him). The best part of the Final Fight was when a pimp was fighting a ho and she knocked his pimp hat off. Like Samson, he lost all his pimp powers and the ho kicked the crap out of him. ![]()

I used to think I wanted to live in a cabin. I think at this point in my life, though, I am most definitely a city girl. Give me smog and department stores or give me death!
Cloud Maiden still hasn’t paid her part of the rent. Apparently her mother is refusing to give her money. I’m stretching myself ridiculously thin and paying her back the $600 this month. I had to swallow my pride and ask my parents to lend me a bit of cash to tide me over til next Monday (payday). My dad and I fight over everything, but when I ask for $50 he always gives me $100 with no questions asked. And he won’t let me pay him back. I’m very grateful but in a weird way it makes it more difficult for me to ask him for stuff, if that makes sense. (I guess I am a spoiled Korean American brat! Who knew?
)
In other news, I’ve started a semi-diet today. I hate dieting, but I also hate going back to Korea and feeling dumpy (which I know I will, if I go back in my present state). Another reason why I hate it there - anorexia is the norm.

On my way to work this morning, I noticed that the flowers are starting to break through the ground. The long winter is at last ending. The mini-blue bells, tulips and daffodils are starting to bloom.

We are about to experience some weird weather. The high on Saturday will be 88 and the high on Sunday will be 71 (You Ass Degrees). This had better be the last of the cold fronts because we are itching for a good soak in the pool.

I will warn you that it’s not in the woods. There are some nice big trees around, but it’s not far off the highway (far enough that noise isn’t going to be a problem) but it’s not really That Cabin that we all want. But it’s by far the closest I’ve ever gotten a chance at!
yawn I didn’t sleep too well, for some reason. Today I need to figure out what I need to buy as far as extremely basic kitchen stuff I don’t have. Also I will need to get a chair, at least. Let’s hear it for thrift stores! For the inflatable bed, I think I will have to buy something new. But I know where to start on that one.

I’ve got a great spinach salad recipe at home that I’ll have to post sometime. I make it for company or to take to various pot luck type dinners and it always gets rave reviews.
OK, these are the best brownies ever. And they’re really fast and really easy to make.
Fudgy Brownies
Ingredients
1 stick (1/2 cup) butter
3 oz (3 squares) Baker’s unsweetened chocolate
1 cup sugar
2 eggs
1/2 tsp vanilla
1/2 cup all-purpose flour
Directions
Preheat oven to 350.
Melt butter and chocolate together. (Recommendation: Put them both into a microwave safe bowl or cup. I like a 4 cup Pyrex measuring cup that I then use as the mixing bowl when I add the rest of the ingredients. Microwave for 30 seconds at a time, stirring after each session. After the first minute, go to 15 seconds at a time. Don’t burn the chocolate! This can also be done in a 2 qt saucepan on the stovetop on low and then use the pan as the mixing bowl. No point in dirtying two bowls!)
Stir in sugar.
Beat eggs in a separate bowl or cup until slightly frothy. Add to chocolate mixture and stir well.
Stir in vanilla.
Add in flour and mix until smooth.
Pour into a greased 8x8 pan.
Bake for ~20 minutes. The edges will pull away from the pan a bit, but don’t let them go until they get dry. The center will still be soft but a toothpick inserted in the middle should come out clean.
Let stand for at least 15 minutes to finish setting up. (You can remove them before this if you can’t stand the wait, but they’ll be really gooey and tend to fall apart before they’ve had a chance to cool a bit.)

I love Caddie, although I feel like she hasn’t aged quite as well as Laura. Still a good comfort read though.
I can’t commit to a Chi-fest - I’ll be leaving in mid-June and life will be hectic between then and now. Especially if the fest is out in the 'burbs. I’ll do my darndest though.

They took my grandpa to the hospital this morning via ambulance because he was dizzy and coughing again. I just got a text from my dad saying that he seems ok and that they are in a room waiting for a doctor now.
