Best I can figure it’s amaretto (sp?), sour mix, tequila and triple sec. Mayhaps a couple ounces of each? I shall have to experiment on this and report back. Not tonight though. I’s too full from dindin.

My ideal wedding would be somewhere people could go barefoot. A beach, perhaps. When I was little I dreamt of a fancy dress with a foot-long train and a whole gaggle of bridesmaids, but now I think I’d be much happier with a small, simple ceremony. Of course, my parents would be horrified.

Taffy Apple Salad

1 20 oz. can of Pineapple (the original recipe calls for crushed, but I prefer chunks or tidbits. If you use rings, you’ll have to cut them into pieces.)
1 8 oz. tub of Cool Whip Free (the turquoise/teal one)
1 package Fat Free/Sugar Free Butterscotch Pudding (Jello makes it; I don’t know if anyone else does)
2 med/large apples or 3 small apples (any kind you have is fine.)

Drain the juice from the pineapples into a two quart mixing bowl. Using a wire wisk (or fast moving fork) mix the pudding into the pineapple juice. (I usually add the pudding slowly as I stir.) Try to get rid of all of the lumps. Whip the Cool Whip into the pudding/juice mixture. Once the Cool Whip is incorporated, dump in the pineapple and stir with a big spoon or rubber spatula. Cut the apples into chunks and dump them in too. (If you’re lazy, make your chunks bigger. If you’re less lazy, well, your chunks will probably be neat and evenly sized. Good for you. Mine never are. You don’t need to peel the apples—well, I never have anyway.) Mix it all up with that big spoon. You can serve right away (If you’re planning on this, you may want to refrigerate your apple and pineapple first. It’s better if everything is cold.) or you can put it in the fridge for later.

This is super easy—prep time is definitely less than 15 minutes. It’s also a Weight Watchers recipe (but it’s super yummy anyway, so please don’t hold it’s healthiness against it). A one cup serving is 1 point.

Are y’all ready for some maritime Alaskan Bush recipes? I don’t measure things unless I am baking, so please taste as you go along.

Pickled Salmon

You need at least an entire (filleted and boned) half of a (preferably red, silver or king) salmon. If you have a whole salmon it needs to be filleted and boned.

Wash your fish and then dry it absolutely dry, patting with paper towels. Even a single drop of water will render the fish inedible.

You’ll need a container for the fish to preferably lay flat. (I salt my fish by the five gallon bucketful, but you don’t need that much fish for one batch.) Scatter a good couple of handfuls of coarse rock salt on the bottom of the container, place fish skin side down, scatter another couple handfuls of salt on top. If you are using more than one fillet put the second skin side up. If using even more fish, repeat skin down/skin up. Cover (to keep any debris out, it doesn’t need to be airtight) and let set for at least one week at room temperature. The salt “cooks” the fish. When the fish has extruded it’s juices and feels firm, it is time to proceed.

Remove fish and place in a large bowl, cover with cold water. This water will need to be changed frequently for up to 24 hours. Test the fish by tasting a small bit now and again, you want it to reconstitute, but be careful that you don’t take it out too soon or it will be very salty, or too late as it will be bland.

Lay fish skin side down on a cutting board, and slice it into approximately 1 inch slices across the body of the fish. When you are done, take each slice, skin side down and run the blade of your knife closely between the meat and skin. It’s easier than it sounds. Place fish in a non reactive container and throw the skin away.

Now it’s time to mix your pickling liquid. You will need enough liquid to cover the strips of fish, and I go by taste, you want the mixture to be about 2/3 - 3/4 water to 1/3 - 1/4 vinegar. I recommend cider vinegar for it’s mellow taste, but the type of vinegar is up to you. I don’t know how well balsamic vinegar would work, as I have never tried it, but white vinegar is somewhat harsh to my taste. (Be careful, as too much vinegar will burn the fish and turn it mushy.) To this add a package of pickling spice, a handful of brown sugar, some Worcestershire sauce, perhaps a bit of soy. Pour this over the fish slices, cover and refrigerate for a day or two.

You will now need some clean jars with lids. Canning jars will do, as will glass mayonnaise type jars. I like to add carrot strips, sliced onions, sweet pepper slices and/or hot peppers (I use a whole jalapeño in each jar) as I pack my fish strips. Finish by topping the jar(s) with the pickling liquid. Cover and refrigerate for at least a week, two weeks is better.

Open a jar and munch on the fish and vegetables as a snack, or maybe an appetizer. Around here it doesn’t last very long!

Boiled Octopus

First, get an octopus! If you get yours at the beach, sling it against the rocks a bit to help tenderize it. Gut the hood, being watchful of the beak, remove the beak and the eyes. Be aware that the octopus will not realize that it’s dead, and will still try to escape.

If it is a large octopus you will want to detach the legs from the hood. Have a large pot of salted boiling water ready, and cook the legs in batches, then cook the hood. I generally boil them for about 20 minutes, and then let them sit in the hot liquid, covered, for another 20 minutes. This helps when removing the skin. Allow the legs and hood to cool and then slip the skin off. Put the hood aside for another recipe.

The legs are now ready to eat. Slice across the legs into 1/2 inch rounds. Eat warm or cold, dipping them into Worcestershire or cocktail sauce.

Fried Octopus

Take the boiled hood and slice it from top to bottom into 1 inch strips. Pound them a bit with a mallet (or rolling pin, or the bottom of a glass jar) to help tenderize them. Preheat a skillet with a bit of butter and garlic, add the strips and fry until they become golden and a tiny bit browned on the edges. Turn out onto a plate and dig in!

Ooh, kaiwik, the octopus preparations -scared- me! :eek: Love seeing the recipes though, especially for the pickled salmon. I’ve only recently taken to liking salmon, other than smoked salmon that is. I’m a definitely be trying at least a few of the recipes on the recipe blog this weekend.

Took some of the leftover lamb and made home-made gyros tonight! I didn’t have any of the yogurt sauce, though, but made an approximation by mixing greek yogurt with feta cheese. Wish I’d had a bit of tahini, though, yum! They were good. :slight_smile:

It’s official: the boiled octopus recipe is my favorite of all time. It was the “sling it against the rocks for a bit” that won me over.

Which Mercedes Lackey series has you hooked, Haze? I agree her stuff like crack – not great literature, but always a good escapist read.

Ohh I really enjoy the Elemental Masters series. When I got Reserved for the Cat from the library I read it in a single sitting (late at night, after Velociraptor was asleep).

Books have always been an escape for me and much of her stuff I enjoy, though several of the trilogies by the time I start to read the third book I get fed up and drop them because they’re basically the same.

Had a nice evening eating and shopping. Had some good stuff happen at work today too. Really tired though, time for sleep…

McUne, the Pepperoni Cheese Bread is really, really good! I got the idea from 2 places - firstly, from something I saw served once at Johnny Carino’s, and secondly from a stuffed Australian bush-bread (aka damper) recipe I found in a magazine! However you stuff it, it is great eating!

I went to Watsucka. It is a place where they do scientific testing on cats. And that was the best thing about the call. I did drive past Rigs’ exit but I didn’t smell cookies to zero in on.

I was really nice out again today. Very windy but warm. The forecast appears bleak with patches of yuck and cripes.

I got a crapload of errands to run tomorrow. Gotta pay car ins, deposit a check, haircut maybe, find/make snacks for cheerleader party…on & on…

Aw beebs, I love you too. I was thinking about you when I posted a story in the The “Share a Random Story From Your Life” thread. It’s about bears.

Well my day (night, to you daywalkers) didn’t start out too well. I saw a beautiful young girl’s picture in the paper and recognized her name immediately. Usually I like seeing pictures of pretty girls, so this would normally be a good thing for a young adult male. But unfortunately I have a self-defeating bad habit of browsing through the local obituaries.

I got angry, mad and sad all at the same time. Never met this girl, but unfortunately I get tremendously attached to these names I see everyday. Last week it was a six year old kid with a terrible case of the flu, the week before that it was a baby with only hope.

After I got out of work I had to get some more dental work, then I hung around a parking lot until 9:30AM for a store to open so I could buy a new pair of shoes. I think the shoes are an important part of this story. You see I would have gone right home to bed if I didn’t have an appointment with a psychiatrist at 1PM, but I couldn’t.

I tried to sleep in my car, failed, hung out at Barnes & Noble until I got tired, then succeeded at napping in my car! 12:30PM my cellphone alarm rings and I’m up, time for the appointment. It was at that point that my vehicle was struck by another vehicle. It wasn’t my fault, but I probably would have been able to avoid it if I wasn’t half asleep. Just some scratches, no real damage. Of course someone I work with happened to be walking out of B&N at that very moment to find me exchanging insurance info. “Go away Karen! Nothing to see here!”

Pyschiatrist: So what brings you in here today?
Me: caaaaaaause I’m nuts.
Pyschiatrist: I can clearly see that.

So here’s the scoop kids. She recommended a couple things. I’m now on depression and anxiety meds, she also recommended I get some more excercise and continue scheduled therapy.

Oh, and one more thing, she didn’t say this directly, but I’ll break down her “doctor-speak” for you, and “spoiler” it for dramatic impact: I need to get a g’damned girlfriend again

So… it’s 3:12 a.m. and I’m posting from my cellphone. Why? I just woke up (about 45 min ago) from the nap that I decided to take at 6 p.m. and my laptop is out in the car.

allow me to fill you in on my lovely day, though. Work was fine however I actually had to turn down a lunch because she called me at 9:45 p.m. thursday evening. Anyways, I wasn’t feeling good at work so I called and made a Dr. appointment. Also as I was on my way to deliver my lunch I stepped down a curb and got a shooting pain up the side of my foot. And thus continued with every step down that I made. So I called the foot dr and he said that apparently when he had given me the latest cortisone shot that he had hit a nerve. AND that I was actually lucky because normally when that happens that people are in EXTREME pain all the time. He said that it would go away in 24 hrs.

Back to the regular doctor… Guess what? I HAVE ANOTHER (the same?) FREAKING UTI!!! Or at least he thinks that I do. I have leukocytes in my pee and he’s going to send it out to be analyzed further. So now I’m about to embark upon my 3rd antibiotic.

Oh, yes, and to answer someone’s question… (perhaps Noonie) My grandpa is not feeling much better and m grandma is being weird and aggravating. Even though he doesn’t feel good she thinks that he needs to take her and the next dor neighbor to the grocery store tomorrow even though I have offered repeatedly to take them. Let me emphasize that this is 100 percent unusual for my grandma as she is usually fiercely protective of him when he is sick. The only thing that I can figure is that she doesn’t want to leave him home alone. But he wouldn’t even be alone because my mom is here too. I talked to my dad about this and he said that the er doc told him not to drie or do too much until he followed up with his regular doctor on monday. So I never made it to TVLand and I will be taking them grocery shopping later today. Actually, I may not be able to make it to TVLand at all this weekend because I have to be back at 10 a.m. tomorrow to decorate 10 dozen pink pants shaped cookies for monday. (I’ll post a picture when they’re done) But I guess absense makes the heart grow fonder, right?

Well, I think I’m done and I really hope that my post goes through as I have no way to save it now and I’d hate to have to type it all out again. :open_mouth:
