I’m making a spinach soufflé that yields 8 half-cup servings. I would prefer 4 one-cup servings. Is this doable, and will it affect the cooking time?
Shouldn’t be an issue - just cook them a little longer. Does the recipe call for a water bath? Even if it doesn’t, I would be tempted to use one with the larger ramekins, it will make them cook a bit more gently.
There’s a risk they won’t be cooked properly in the middle (and much more prone to fast collapse), or with extended cooking times, they could be overcooked on the outside by the time the middle is set.
Do you already have the dishes to cook them in? If not, maybe you could find some oval or oblong dishes that have a full cup capacity, but no greater width than your half-cup dishes.
If it has to be dishes that are just bigger all round than the ones in the recipe, I’d be inclined to turn down the heat just a little, and extend the cooking time by maybe 30%.
