Favorite 1,2,3 topping pizzas

So you just got a promotional coupon from your go to pizza place that offers you a free pizza delivered on each of the next three friday’s. The first week its a one toppin pizza, second week its a two topping pizza, third week its a three topping pizza. It is what it is, you can’t pay extra for extra toppings or order with any fewer, also no pizzas that are half one thing and half another. What do you choose to have on your three pizzas?

For me
1 topping: Tomatoes (one topping isn’t really enough to fill a pizza so I choose something that accentuates the sauce.)
2 toppings: Ham and Pineapple (perfect 2 topping combination)
3 toppings: Italian sausage, green peppers and mushrooms (good solid pizza since I’m not a fan of pepperoni).

3: Italian sausage, mushrooms, and green peppers

As you can tell, I like Italian sausage.

My 1,2,3 picks as well, though I’d be fine subbing onions for the mushrooms if a companion doesn’t like them.

I like pepperoni just fine but sausage is better, unless it’s those gross crumbles.

Onions on the four topping, but, yes, I’m happy to sub out the mushrooms for them, as well.

ETA: There may be one exception for the two-topping. Italian beef and hot (Chicago-style) giardiniera, but only a few places do it well, so generic place, sausage & mushroom. Oddly, I generally do not like more than one meat on my pizza. (Maybe chicken & bacon or clam & bacon on a white pizza.)

What is italian beef and how does it differ from sausage.

Italian beef is a thin sliced beef roast. Really thin, with Italian spices.
(It makes a lovely sandwich first, but it also kicks ass on pizza.)

1-topping: either pineapple or mushroom
2-topping: pineapple & onion or mushroom & onion
3-topping: mushroom, onion, and spinach.

That’s assuming they just have regular pizza toppings. If there were some more interesting (and not too soggy) kind of vegetable available, such as broccoli or corn or peas or even fake/vegetarian/plant-based “sausage”, I’d probably put that on instead of spinach.

One is beef, and one is (usually) pork.

Anchovy and pineapple is a great combination, but it has to be done right, the pineapple has to be big pieces that are seared on a skillet before being added to the pizza. That’s my go to at home.

As mentioned above, Italian beef is normally served as a sandwich, and is a Chicago-area thing mostly. If you’ve heard of the Netflix series “The Bear”, it’s about an Italian beef stand. Super-thinly cut (normally) slices of usually top sirloin or round, with an Italian jus. Here’s what the sandwich with giardiniera looks like:

So, basically take those innards and put 'em on a pizza. If you nestle an Italian sausage in there, you get a “combo.” Works on pizza, too, with the extra sausage, but it’s a bit too much gilding the lily for me.

I ordered option 1 for many years. I had beef & pork with friends and began ordering it. 3 is a great choice when the restaurant offers provolone as a topping.
