Ima go for different toppings.
- Pepperoni. Classic for a reason, and I don’t often order it, so it’s a treat when I do.
- Olives and pickled onions. The sweet/savory/sour/salty/oily notes all get treatment here.
- Spinach, feta, and walnuts. This has been our go-to order at the best local pizzeria for a couple decades now, and it’s so so good.
Mine probably fall something like this:
1: Salami
2: Prosciutto & onions
3: Sausage, calabrian peppers, and salami.

I remember the first time I had eggplant on pizza - someone else had ordered too much, and wanted to share. I had only had eggplant once before, and my parents didn’t know how to cook it. They still don’t like it.
I rarely get eggplant on pizza, because I usually share a pizza with my husband, and a lot of places here won’t do different topics. They don’t even do a quattro stagioni (four season) pizza right. They mix all the toppings, even though it should have four different quadrants.
Now I want pizza.
- Mushrooms
- Mushrooms, fresh garlic
- Mushrooms, fresh garlic, Italian sausage but REAL Italian sausage and not that mealy, nasty shit that’s round and gross, but sausage freed from its casing.
- Pepperoni. The old standby. I mean, I’d prefer more than one topping, but if for some reason I’m limited to one that’s what I’ll take.
- Pepperoni and mushrooms.
- Italian sausage, tomatoes, and fresh basil. This has become my go to when I make pizza at home.
Pepperoni (cooked until it’s crisp, even a bit charred). If I can have only one topping this one has enough flavor and texture to stand up on its own.
Bacon and mushroom.
Bacon, carmelized onions and fresh basil (hopefully crisped a bit in the oven).

My three canonical pizza toppings are anchovies, garlic and olives. If I had to pick only one or two of those, it would depend on my mood, but there is no possible non-delicious solution.
