I work at a major financial institution and even though it’s not in danger of failing (it already went through restructuring) these last two weeks have taken their toll on me. I feel like I’ve been run over by a truck.

Just got back a while ago… it was great seeing everyone! I took some photos, which I will post later this evening. I hope everyone got home OK in the rain.
We’re all home, safe and sound. It was not fun driving home in that rain.

We got home safe and sound. We had a great time! We’re sorry we were already leaving when Gingy and Dave and family showed up, though. But I don’t think supervenusfreak’s brother was going to last too much longer.
We’re home now also. We went up to Harrisburg to visit my brother, SIL and nephew and didn’t get on the road until 6:30 or so. Had a great time today! I think I spent most of the day chatting with Engineer-Comp.geek’s wife about kids and pets (Eve? if that’s not her name, sorry!) but it was so cool putting faces to those of you I hadn’t met before, and re-seeing those I had.

A couple of people seemed interested in recipes. Baked Beans are at
http://chefmom.com/recipebox/recipes/12.htm (Betsy is a friend of mine). I’ve made them vegetarian (used canned vegetarian baked beans and omitted the bacon); in fact normally I make one “leaded” and one “unleaded” but since I only had one crock-pot, I had to settle for being a purist.
The cheese ball was from a recipe my mother made as far back as I remembered. She used to make numerous ones at Christmastime and give them as gifts. I do not know where the recipe originated. Note that the amount of cream cheese listed would be perfect if you could get the 3 ounce bricks (which appear to have been discontinued).
11 oz cream cheese, softened
10 oz. sharp chedder, grated
3 oz. Roquefort cheese, crumbled.
3 tblsp grated onion (she only used 1, guess whoever gave her the recipe said 3)
2 squirts Worcestireshire sauce
1/2 c. chopped pecans (I omit as I dislike them and Dweezil can’t eat nuts)
1/2 c. dried parsley
Mix all the above. Chill until you can shape into a ball. Then roll in ground pecans and more dried parsley. As above, I omitted the ground pecans. Best made at least 24 hours before serving, as the flavors really need to meld.
If making to give as gifts, double the recipe and shape into 3 balls. I doubled the recipe last night, put slightly more than half into the ball I brought for today, and put slightly less than half into one I saved for some friends.
Got home safe and sound a couple of hours ago. mudgirl ate a pear (she’d have liked junk food, but I’m sure she had quite enough 'under the pavilion, so I made her eat a pear), and had a shower and is now sound asleep. I’m headed for bed myself.
It was great seeing everyone, seeing new faces, and all that stuff!
We had fun today. I’m glad I talk the family into this weekend outing.
I’ll post pictures sometime this week. I can’t say when.
BTW: Eve is my wife, so maybe you actually got the husbands confused. I still haven’t convinced her to join.

Hello again all! It really was fun and I wish that we could have stayed as long as we usually do, but as Jayjay said, little brother was getting a bit antsy. It was a blast and we can’t wait to do it again. Next time I will remember to bring the bacon salt.
I think that Bibliocat and a couple of others asked for these so I am posting them here and now.
Diet Soda Cake Berry Cobbler
1 yellow cake mix
2 1 lb. bags of frozen mixed berries
1 1/2 cups clear diet soda
1/4 cup egg beaters or 2 egg whites
Preheat oven to 350.
Grease a 9x13 cake pan.
Arrange the berries in the bottle of the pan.
Mix together the other ingredients, until the batter is smooth.
Pour or spoon the cake mixture over the frozen berries.
Cover it with foil and bake for 20 minutes. Uncover it and bake for 40 minutes more or until an inserted knife comes out clean.
My Basic Pasta Salad(This is the one that I made for the picnic this year. It easy to make and works great when made ahead and refrigerated. I also like to swap ingedients, mainly the veggies, for variety.)
1 lb. whole wheat rotini
6 hard boiled eggs
1/2 lb fresh mozzarella
2 packets good seasons italian dressing
1 clove garlic
3 roasted red peppers
1 cup thinly sliced leeks
freshly grated romano cheese
salt and pepper
makings for salad dressing (oilive oil, red wine vinegar, salt and pepper)
Cook the rotini for 10 minutes, or until al dente. Drain and put in an ice bath for 10 minutes (to stop the pasta from cooking). Drain well. Put in a large mixing bowl.
Slice the leeks thinly and add to the bowl.
Dice the roasted peppers in chunks and add to the bowl.
Cut the mozzarella into bite sized chunks and add to the bowl.
Peel the eggs. Remove the yolk and discard. Slice the egg whites and add to the bowl.
Mince the garlic and add to the bowl.
Add dressing to the bowl and mix well. Let sit in the fridge overnight, stirring a couple of times to mix.
Throw on the romano cheese before serving.
The dressing - Most Italian dressings will do just fine. I like the Good Seasons and usually use that, making it with the red wine vinegar and olive oil.
