So last week, at the farmer’s market, I scored a couple goose eggs. (Just as I was getting down on my favorite farm for charging $4/doz, while someone down the way was at $2.50, they hooked it up- their little customer loyalty program). I tried a couple last year, and turned those into an omelet. Nothing too special. What cool things can I do to the two I have now?
Are there no clever uses for goose eggs?

Poached, scrambled, over easy, with green ham… Do they taste any different from the things I usually eat? Any vandalism targets in your vicinity?
They’re difficult to cook whole - the timing to get them perfectly boiled is almost impossible and they’re so big that even frying them doesn’t really work - they’ll either be horribly overcooked in parts, or if you do them sunny side up, the yolk won’t be much more than slightly warm. Over easy is almost impossible to perform.
Scramble them and stir in some chopped up smoked salmon and snipped chives at the last minute. Serve on wholemeal toast with butter.
decided to go with portabella sauteed with green onions and sage, a spalsh of old two-buck chuck, poured in the beaten eggs, with frech basil and parsley, and raclette cheese. very nice. defintely a different flavor than chicken eggs- a bit meatier. served with hoegaarden. yum yum.
